Baking Soda and Vinegar – You can can use white vinegar or a combination of white vinegar and baking soda to replace eggs in vegan recipes. Follow the directions in the recipes to see for the measurements.
This can be tricky sometimes since you need to be cautious about whether the recipe calls for baking soda or not.
If the recipe calls for baking soda, you shouldn’t use extra baking soda along with vinegar since this can cause an unpleasant flavor. You can just use the vinegar if the recipe already has enough baking soda in it.
If the recipe does not call for baking soda, you can use the below measurement.
You can use 1 tablespoon of vinegar with 1 teaspoon of baking soda to replace one egg in recipes. Adjust the baking soda measurement for recipes that call for baking soda.
For example, if the recipe contains 1 egg and 1 teaspoon baking soda, you can use 1 tablespoon and 1 baking soda (no need of 2 teaspoons of baking soda)
If the recipe contains 1 egg and 3/4 teaspoon baking soda, you can use 1 tablespoon of vinegar and 1 teaspoon of baking soda (don’t use 1 and 3/4 teaspoon of baking soda). I hope you get the idea (if you have confusion avoid this option).
Apple Cider Vinegar – I love apple cider vinegar in egg less baking recipes and it is definitely one of the best vegan egg substitute you can use for baking. Instead of white vinegar, use 1 tablespoon of apple cider vinegar with 1 teaspoon of baking soda.
