Chakkakuru mezhukkupuratti or jackfruit seed stir fry recipe is South Indian Kerala style stir fry recipe using jack fruit seeds. The stir fry made using jack fruit seeds is very delicious, crunchy in texture and makes a great side dish with rice for lunch or dinner, which is very healthy as well. The Kerala style chakkakuru mezhukkupuratti recipe uses a basic Kerala style seasoning made using coconut oil, brown mustard seeds, dry red chilies and curry leaves. However you can also prepare this delicious jackfruit seed stir fry without using the seasoning. If you wish to keep it plain and simple. just make the stir fry using oil and salt.

Though the preparation of this jackfruit seed stir fry is not difficult, it can be tricky to do if you are not familiar with using jackfruit in food.
The jackfruit seeds obtained from ripe jackfruits can be quite slippery and it will be difficult to remove the outer white skin while its still slippery. The seeds from unripe jackfruit may not be very slippery like the seeds from the ripe ones, but it is always a good idea to dry the seeds prior to cutting and using in the recipe.
The best way to dry the jackfruit seeds is to leave them in your kitchen counter in a single layer in the flat surface(or you can dry them out in the sun) and they should be pretty good to use in a couple of days. While peeling the skin of the seeds, its better to be cautious to avoid any cut in the hand. Once you have removed the outer white skin, just scrape off mildly the inner brown layer which will come off very easily.
As this is a Kerala style recipe, I recommend using pure coconut oil to prepare the stir fry which will make the mezhukkupuratti or stir fry more delicious and flavorful, however you can also use other oils like sunflower oil or canola oil or any oil that you usually use for making stir fries.

- oil 4 tablespoons (add more if needed)
- salt as required
- turmeric powder 1/2 teaspoon
- red chili powder 1/2 teaspoon optional
- water 1/2 cup (add little more if needed)
- mustard seeds 1 teaspoon

- Dry the jack fruit seeds and remove the outer skin which is white in color. If the seeds are dry, usually this skin comes off easily. Gently scrape to remove the inner brown layer as much as you wish, you do not need to remove the brown skin completely. The seeds will have a sticky residue, so using a gloves for your hands will be helpful.
- Slice the jackfruit seeds lengthwise, be very cautious while cutting the seeds as the jackfruit seeds are quite hard in nature. Make sure to use a good quality cutting board and also use the gloves to protect your hands. Keep the sliced jackfruit seeds aside.
- Heat two tablespoons of oil in a pan and let us make the seaoning first (if you are using the seasoning to make the authentic dish).
- Add the mustard seeds and when the mustard seeds splutter, add the dry red chilies and also curry leaves, let this fry for a few seconds.
- Once the ingredients for the seasoning are lightly fried, you can add the sliced jackfruit seeds to the oil (if you do not want to add the seasoning, just add the sliced jackfruit seeds directly to the oil without using the ingredients for seasoning).
- Add salt and stir fry for 1 to 2 minutes.
- Add the water, turmeric powder and red chili powder, mix well, cover and cook in low heat for about 5 to 6 minutes or until the seeds are almost cooked. Make sure not to cook it until soft, as we are going to lightly fry them in remaining oil which will cook the seeds completely. In case the water is evaporated and the seeds are still hard, you can add a little more water and cover and cook for another few more minutes.
- Once the jackfruit seeds are almost cooked and the water is all absorbed(if there is any water remaining in the pan you can heat it in medium heat for a couple of minutes which will help evaporate the water), add the remaining two tablespoons of water and stir fry the contents in the pan.
- Stir fry the seeds in oil for about 2 to 3 minutes or until the seeds are completely cooked and the seeds look lightly golden brown in color. Make sure not to fry the seeds for a long time, as it will make them hard. The stir fried jackfruit seeds will be crunchy in texture with a golden brown crispy outside and soft inside.
- Transfer the stir fried jackfruit seeds to the serving dish lined with paper towel to absorb any excess oil (do not transfer it to any plastic plate or dish as the seeds will be really hot now).
Allow the stir fried jackfruit seeds to cool down a little, and serve the delicious jackfruit seeds while it is still warm. You can enjoy this as a side dish with rice for lunch or dinner or as a delicious and simple snack if you wish.
