Kerala Instant Pot Cabbage Thoran (Poriyal) Indian Stir Fry

Instant pot Indian Kerala style cabbage thoran or cabbage poriyal is so easy to make, simple and delicious. It turns out perfectly just like you prepare on stove top, however the cooking time is much lesser when you use instant pot. In fact, the pressure cooking time for cabbage thoran in the instant pot is just 1 minute!

I have already made delicious and easy Kerala cabbage thoran (poriyal) on stove top which you can make on stove top using a pan.

When you make cabbage thoran or poriyal for South Indian style sadya (feast) or Kerala style onam sadya along with many other side dishes, this instant pot cabbage thoran will help you to save a lot of time since cooking the cabbage in instant pot is super easy and time saving.

What Is Cabbage Thoran Or Cabbage Poriyal?

Cabbage thoran and cabbage poriyal are basically the same thing. It is a vegetarian (and vegan) side dish prepared with cabbage, coconut and spices.

This is a South Indian style preparation of cabbage which is usually served as a vegetable side dish with rice for lunch or dinner.

It is so delicious and so popular in South India, its one of the main side dishes used in South Indian vegetarian meals.

In Kerala, this dish is known as cabbage thoran while in Tamil Nadu its known by the name cabbage poriyal (slight differences may be observed in preparations as well).

How To Make Instant Pot Cabbage Thoran?

You ca use about one medium sized cabbage or half of a large sized cabbage to make this cabbage thoran in instant pot.

This is equivalent to about 8 to 10 cups of shredded cabbage.

I used onion & garlic powders in this recipe and also used dessicated coconut instead of fresh produce.

This is not the traditional way of preparation as we always use freshly crushed or chopped garlic and onions but this is an easy recipe for cabbage thoran!

You may replace with fresh garlic & freshly grated coconut.

Also you may saute a finely chopped onion before adding the cabbage if you wish.

How To Make Instant Pot Kerala Cabbage Thoran (Cabbage Poriyal)?

We use the following ingredients to make cabbage thoran or cabbage poriyal in the instant pot pressure cooker.

As you can see, I have used about 8 cups of shredded cabbage (you may use upto 10 cups).

This amount of shredded cabbage is equivalent to a medium sized cabbage or if the cabbage is large sized, you will need only about half of the large cabbage.

Ingredients used

cabbage 8 cups shredded (medium size pieces)

coconut 1 cup ( I used dessicated coconut in this recipe)

green chilies 1 to 2 (optional)

salt adjust to taste

water ¼ cup

Spices:

turmeric powder 1 teaspoon

red chili powder ½ teaspoon (optional)

cumin seeds powder ¼ teaspoon

garlic powder 1 teaspoon (use freshly crushed garlic instead)

onion powder 1 teaspoon

For seasoning

oil 2 tablespoons

mustard seeds 1 teaspoon (or cumin seeds)

red chilies dried (broken) 4 to 5 (optional)

curry leaves 1 string (make sure no water in leaves if using, you may skip this if you don’t have fresh curry leaves)

Step By Step Instructions

Add the oil to the instant pot and press saute.

Once the oil is hot, add mustard seeds.

Once it splutters, add the broken red chilies & curry leaves (if using) and lightly fry.

Add the shredded cabbbage (and sliced green chilies if using), stir well and saute for about a minute.

Add salt and all spice powders, mix well and saute for another 1 minute. Press cancel so the saute function will stop.

Add the water (¼ cup do not use more water) and mix well.

Close the instant pot with lid in sealing position and cook in high pressure for 1 minute.

Wait for a natural pressure release for 5 minutes, then carefully do a gradual manual pressure release to slowly release the remaining pressure (the steam release will be very hot, so do this very carefully).

Once the pressure is all released, carefully open the lid and stir the contents (if there’s a little water remaining at the bottom of the pot, it is fine since we are going to add the coconut).

Add the dessicated coconut (if using freshly grated coconut, coarsely grind the coconut before adding to the instant pot), stir well with the cabbage.

Press saute button and saute the mixture for a couple of minutes, stir in between.

Once the mixture is sauteed, press cancel to stop the saute, unplug the instant pot and transfer the inner pot to a cool place so it won’t cook further.

Serve the delicious instant pot cabbage with rice for lunch or dinner along with any other curry like moru curry, pulissery or sambar!

Ingredients

  • 8 cups cabbage shredded (medium sized pieces)
