However, if you do not have ghee at home, you may substitute with regular butter also.

What is ghee rice or Indian style buttered rice?
Ghee rice is popular Indian style buttery rice. It is often garnished with nuts like fried cashews & caramelized onions and it's more popular in South India.
Ghee rice is a very delicious rice which is served with any curry of your choice, and also other side dishes like pickles.
In this simplified and easy ghee rice recipe, we just use a few ingredients necessary to make the buttery rice without losing any flavors.
I am not sauteeing any ingredients including onions, but it doesn't lose any flavor with this easy method.
The instant pot does a perfect job in making this buttered rice so simple, easy to make and delicious.
The goal here is to make a delicious buttered rice in few minutes with minimal preparation.
You can also saute the onions & add garnishing like fried cashews, caramelized onions etc for a much deeper flavor if you wish.
However, if you are looking for a quicker version of simple Indian style buttered rice that is delicious, do try this simple ghee rice recipe.
As I already mentioned, if you do not have ghee at home, you can also use regular butter to replace ghee.
You can use unsalted butter or if you use salted butter, just adjust the amount of salt you use in this recipe.
So here is how you can quickly make this easy, delicious ghee rice or buttered rice in instant pot.
How to make ghee rice or Indian buttered rice in instant pot?
We use the following ingredients to make easy, delicious ghee rice or buttered rice in the instant pot.

white basmati rice 2 cups
water 3 cups
onions 1 large size
ghee (clarified butter) 2 tablespoons
salt adjust to taste
bay leaves 2 (optional, added for fragrance)
for garnishing & seasoning (optional)
ghee or oil 1 tablespoon
raw cashew nuts 2 tablespoons
raisins 1 tablespoon (add more if you like)
minced or thinly sliced onions 2 tablespoons
step by step instructions
Wash the rice very well and add to the instant pot.
Chop the onion in long slices (preferrably quite thin or in medium thickness), and add to the instant pot.
Also add the salt, ghee and water, mix everything to combine (also place the bay leaves on top, if using).
Close the instant pot with lid in sealing position and cook in high pressure for 5 minutes.
Once this is done, press the "keep warm/cancel" button and wait for a natural pressure release for about 12 minutes.
After that, carefully do a gradual manual pressure release.
Once the pressure is all released, carefully open the lid.
Gently fluff the rice using a fork or good quality spatula or rice paddle (do not stir the rice much when it is hot).
To make seasoning for garnishing (optional)
In a different pan on stove top, heat the one tablespoon of ghee.
Add sliced onions and lightly fry until they are browned (if using dried minced onions, do not add now as they quickly brown).
Add the cashews and lightly fry.
Add the raisins and lightly fry them too.
If you are using dried minced onions (if you sre using fresh sliced onions, you fry them in the first step!), add them too now and lightly brown.
Add the prepared seasoning to the ghee rice, gently mix in.
Serve the delicious, easy Indian ghee rice with any curry, raita, pickles etc as you like!
