Indian mango yogurt curry with ripe, sweet mangoes, creamy yogurt and spices makes a very simple, easy, delicious sweet and spiced vegetarian curry! This is also a simple mango pulissery recipe without using coconut, though you may also use coconut to add more traditional, exotic flavors!

If you have mangoes, yogurt and spices at home and if you love rice served with curry, do make this sweet and spiced mango yogurt curry and serve it with rice along with some vegetables or other side dishes of your choice for a delicious lunch or dinner!
This is a simple, popular curry from South Indian state Kerala, where it is also known as mngo pulissery or mambazha pulissery (mambazham means ripe mangoes).
The variations of this curry also include using coconut in the preparation, to make it more flavorful.
You may use a little coconut milk along with yogurt or you can grind freshly grated or shredded coconut along with one or two green chilies and ½ teaspoon cumin seeds and add it to the mangoes while it's cooking for a more intense coconut flavor in the curry.
This recipe is not vegan since we use yogurt, but if you want to make vegan mango curry, you can just use grind coconut or coconut milk mixture as specified earlier, instead of yogurt similar to the preparation of this Indian spinach curry.
As I mentioned, this is also popularly known as mango pulissery or mambazha pulissery in malayalam language in Kerala.

How To Make Indian Mango Yogurt Curry?
To make Indian mango yogurt curry, we use the following ingredients.
ingredients
mangoes 2 ripe
yogurt 1.5 cups
water ½ cup
salt adjust to taste
sugar 2 tablespoons
turmeric powder ½ teaspoon
red chili powder or paprika ½ teaspoon
for seasoning:
mustard seeds (or cumin seeds) ½ teaspoon
oil 1 tablespoon
curry leaves 1 string
dry red chilies 2 to 3 (broken)
Step by step instructions
Wash the mangoes very well, peel and slice into medium sized pieces (discard the pits). Keep the sliced mangoes aside in a bowl.
In a separate bowl, add the yogurt and whisk very well so there are no lumps and the yogurt has a very smooth texture. Keep this also aside.
Heat oil in a medium sized pan, add mustard seeds (keep the heat to medium low).
When the mustard seeds splutter, add curry leaves (make sure there is no water in the leaves) and broken dried chilies and lightly fry these to make a simple seasoning (if you are using cumin seeds instead of mustard seeds, just lightly fry them before adding other ingredients).
(I didn't have curry leaves at the time of preparing this, so I couldn't use but I highly recommend using it for the best flavors!)
You may also add one tablespoon of diced shallots or small onions or dried minced onions and lightly fry if you wish, for additional flavor.
Once it is done, add the mango slices carefully to the pan and gently mix to combine with the seasoning.
Saute the mangoes for about a minute.
Add the water, sugar, turmeric powder, red chili powder and little salt, mix well.
Keep the heat at medium and bring the mixture to a boil.
Once the mixture begins to boil, reduce the heat to low, cover the pan and cook the mangoes for another 3 to 4 minutes until mangoes are soft.
Once the mangoes are cooked, open the pan and mix the contents.
Turn off the heat, add the whisked yogurt to the pan carefully and mix well immediately (to prevent the yogurt from curdling, it is important that you mix the contents as soon as the yogurt is added).
Make sure to mix the yogurt very well into the mango curry so the flavors are well blended!
Serve the delicious mango yogurt curry with rice (white basmati rice or white jasmine rice or brown rice or Kerala boiled rice any rice of your choice) and vegetables or any side dish of your choice for an easy, simple, delicious lunch or dinner!
