Instant Pot Rice Pudding With Sweetened Condensed Milk

Ingredients

  • ½ cup white basmati rice
  • ½ cup water
  • 2.5 cups whole milk
  • 14 oz sweetened condensed milk may adjust the amount slightly according to preference
  • ¼ teaspoon cinnamon powder

Instructions

  • Wash the white basmati rice and transfer it to the pot.
  • Add water and milk also to the pot, stir the contents very well.
  • Close the instant pot with lid in sealing position.
  • Press the porridge mode of instant pot, and cook for 20 minutes.
  • Once the cooking is done, wait for a natural pressure release of about 10 minutes and after that, you can do a careful and gradual controlled manual pressure release.
  • Once the pressure is all released, open the instant pot very carefully and stir the contents.
  • Add the sweetened condensed milk to the pot and stir the contents again very well. Add the cinnamon powder too to the rice pudding, and stir in to blend with the pudding. Serve the delicious and creamy rice pudding warm or chilled as you prefer!

Notes

The rice pudding thickens slightly after it cools down.
If you want to thin it down, you may add little more chilled milk as needed to adjust the consistency.
Also you may adjust the sweetness by slightly adjusting the amount of condensed milk used based on your preference.

To Make Rice Pudding Without Condensed Milk

You can make rice pudding without sweetened condensed milk using evaporated milk and sugar or by using just milk & sugar.
To use just milk and sugar to make rice pudding without using condensed milk, you will need about 1 cup of sugar for ½ cup rice (as used in this recipe).
You can add the sugar along with the rice to the instant pot and the let the rice cook in the milk and sugar mixture.
Once the rice is cooked, you may add an extra 1.5 cups of cold milk (or as needed) to the rice pudding to adjust the consistency of the pudding.
