This easy, simple and refreshing watermelon salad without feta cheese relies on fresh watermelon cubes, mint leaves and few simple ingredients for salad dressing.

Ingredients

  • 2 cups watermelon chilled, cut into medium sized cubes
  • 1 tablespoon lime juice or fresh lemon juice
  • 1 tablespoon honey  you can use vegan honey to keep this recipe vegan
  • ¼ teaspoon salt
  • 1 tablespoon fresh mint leaves chopped

For garnishing

  • mint leaves a few, optional

Instructions

  • In a bowl, mix together the salad dressing ingredients - lime juice, salt and honey so they are well blended.
  • Transfer the chilled fresh watermelon cubes to a large bowl or salad bowl.
  • Add the chopped mint leaves to the watermelon cubes and gently mix in.
  • Add the honey lime salad dressing to the watermelon mint leaves mix and toss gently using a spoon.
  • Transfer the salad to a serving salad bowl and serve immediately.
  • Garnish with few fresh mint leaves if you like.
  • For best results, it is always best to serve this salad immediately. If saving for later use, make sure to keep refrigerated and use the same day or next day for best results.
