Ingredients

for the fruit filling:

  • 3.5 cups blueberries (may use upto 4 cups for extra juicy cobbler)
  • ½ cup sugar
  • 1 tablespoon cornstarch

for the batter:

Instructions

To make the berry filling:

  • Wash the strawberries very well, add sugar mix well with the blueberries.
  • Add the cornstarch and mix evenly with the sugared blueberries so the fruits are coated with the cornstarch.
  • Keep this prepared fruit mixture aside, you can even refrigerate this mixture for keeping it fresh until we make the batter for the cobbler.

To make the batter:

  • Add the flour to a large bowl.
  • In a different bowl, mix together the softened butter and sugar until sugar is dissolved.
  • Add milk and vanilla extract also to the butter sugar mixture and whisk well to combine.
  • Pour the wet ingredients mixture to the dry flour mixture and mix well to combine and form the batter for the cobbler.

To make the blueberry cobbler:

  • Preheat oven to 375 degree Fahrenheit.
  • Grease a pan with little butter and place the blueberries in a single layer.
  • Pour the batter over the blueberries, gently mix in to spread it evenly across the pan.
  • Place the pan inside a cookie sheet or baking sheet (to catch any drippings from the cobbler) and bake the cobbler in the preheated oven for about 35 minutes.
  • Reduce the oven temperature to 350 degree Fahrenheit and bake for another 15 minutes or until the cobbler is cooked through!
  • Serve the delicious blueberry cobbler while its still warm (or you may chill it once it reaches room temperature) with ice cream or whipped cream as you like!
