Strawberry Compote For Pancakes, Cheesecake (Instant Pot)

Easy, quick, delicious strawberry sauce or strawberry compote made in instant pot which makes a great strawberry topping for cheesecakes, pancakes, angel food cakes, waffles, toast etc or you can stir it into yogurt, ice creams, oatmeal etc as you like!

Ingredients

  • 1 lbs strawberries (equivalent to 16 oz, about 2 cups fruit)
  • cup sugar

To make cornstarch mixture (optional)

  • ½ tablespoon cornstarch
  • 2 tablespoons water

Instructions

  • Wash the strawberries very well, hull the strawberries (remove the green parts) and slice in hlaves. You can slice in quarters for bigger sized strawberries.
  • Add the sliced strawberries to the instant pot.
  • Also add sugar to the instant pot, mix well with the strawberries.
  • Close the instant pot with lid in sealing position and cook in high pressure for 1 minute.
  • Once the cooking is done, press cancel button and wait for a natural pressure release for about 8 minutes.
    After the eight minutes of natural pressure release, if the pressure is not completely released, carefully do a gradual manual pressure release.
  • Once the pressure is all released, carefully open the lid.
  • Stir the contents and press saute to simmer the contents to thicken the sauce. Make sure you stir often and the sauce will thicken in few minutes.

To add cornstarch mixture (optional)

  • If using cornstarch mixture to quicken the process or if you want a thicker sauce, make the cornstarch mixture by mixing the cornstarch and water. Make sure there are no lumps in the prepared cornstarch mixture.
  • Add the prepared cornstarch mixture to the simmering strawberry sauce, stir in and continuously stir so no lumps are formed.
  • The sauce will quicky thicken in about a minute or so, and it will further thicken as it cools down, so once the sauce reaches almost the desired consistency, press cancel to stop simmering.
  • Also transfer the inner pot to a safe, cooler place so the sauce won't thicken further.
  • Once the strawberry sauce is cooled a bit, transfer to air tight, clean, dry glass jars.

Notes

This is a small batch strawberry sauce and if you are not using the same day, make sure to transfer the prepared sauce to refrigerator.
You can store this strawberry sauce in the refrigerator for about one to two weeks time if you store it properly.
Enjoy the delicious strawberry sauce as a topping for angel food cakes, pancakes, cheesecakes etc or stir it into yogurt, oatmeal, ice creams etc as you wish.
You can also use this strawberry compote as a filling between any of your cake layers or cake topping as you wish!
