Fried Spaghetti Noodles With Eggs Using Leftover Pasta

Stir fried spaghetti noodles with fried eggs makes an easy, quick, delicious brunch, lunch or dinner using leftover cooked spaghetti noodles!

Ingredients

  • 8 oz cooked leftover spaghetti noodles equivalent to about 2 oz dried pasta, or just use two servings of cooked spaghetti enough for two people if you are not sure how to measure cooked spaghetti
  • ¼ cup marinara sauce or any pasta sauce (may use more as you need)
  • salt adjust to taste
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano or basil powder
  • ½ teaspoon italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon red chili flakes or as needed, optional
  • 2 large eggs
  • 2 tablespoons olive oil may use slightly more amount for pasta & use a little for frying eggs also

Instructions

To make the fried eggs:

  • Crack the eggs into a heated non stick pan, add little salt, black pepper and little olive oil or butter and cook until the white is completely set and the egg yolk is also cooked to your preference.
  • If needed, you may flip the eggs carefully and cook the other side too, if you want it fried on both sides.
  • Based on your preference, you can keep the fried eggs over easy (runny yolks), or over medium or over hard eggs (completely cooked yolks and whites). I chose to make over hard eggs, but as I told it is your preference and if you prefer runny yolks, go for it!
  • Keep the fried eggs aside away from heat so it won't overcook.

To prepare spaghetti noodles:

  • Add the spaghetti noodles to a large pan or skillet.
  • Also add the olive oil, mix with the pasta and let it stir fry for about 1 to 2 minutes.
  • Once the pasta is lightly stir fried in olive oil, add the seasonings like oregano, basil powder, italian seasoning, onion powder, garlic powder and red chili flakes (if using) gently mix the contents and stir fry for another 2 to 3 minutes until your preferred texture is reached.
  • Add the sauce (if using) and stir fry again for about a minute.

Adding fried eggs to spaghetti noodles:

  • Add the fried eggs also to the pasta (spaghetti), toss the noodles over the eggs. Let this cook in low heat for about a couple of minutes.

Notes

You can fry the eggs in the same pan before adding the noodles if you do not want to use two pans.
However, the eggs might get a little overcooked in this case, so if you prefer soft cooked eggs, it is better to cook in a differen pan.
If you fry the eggs in the same pan, you can also transfer the fried eggs to a plate and add it later once the pasta is stir fried.
I often fry the eggs also in the same pan for convenience and it is still very delicious.
The amount of pasta sauce can be adjusted to your preference.
Since we use leftover spaghetti in this recipe, chances are that the spagetti already has some sauce and seasonings in it.
So adjust the sauce and seasonings based on what you already have in the pasta and also based on your preferences.
The recipe is very flexible and basically, stir fried spaghetti noodles with fried eggs can't go wrong even if you make a few changes!
