Easy, delicious, spiced scrambled vegan tofu without nutritional yeast! It's easy to make, quick and makes a delicious side dish with lunch or dinner or or use it as a delicious filling for taocs, sandwiches etc!!

Instructions
to make tofu scramble seasoning:
Add all ingredients to make the seasoning to a bowl and mix well and keep this ready while we prepare the tofu scramble.
to make tofu scramble:
Drain the water from the tofu packages and place the tofu blocks in a large skillet or frying pan.
Using a long spatula, you can break the tofu into pieces.
Turn on the heat and cook the tofu in medium heat so any remaining water left in the tofu will get evaporated.
Once the remaining water is almost evaporated, add the tofu scramble seasoning that we prepared and also more salt as needed (we also have some salt added to the seasoning), and mix well with the scrambled tofu and continue to cook.
Once the water is all evaporated, add oil and dried minced onions, mix well with tofu scramble and stir fry the scrambled tofu for a couple of minutes so the tofu starts browning.
Add more dried parsley leaves and also curry leaves (if using) for garnishng and for more flavor.
Once the tofu is done, turn off the heat and enjoy the tofu scramble along with other side dishes like roasted vegetables, corn or any side disheas you like or use it as a delicious filling for taocs, sandwiches etc!
