Over hard or over well eggs are fried eggs that have egg yolks that are completely cooked through unlike over easy and over medium fried eggs with runny yolks. So if you are not a fan of runny yolks, do try this easy and simple over hard eggs for your breakfast or brunch for a quick, easy, nutritious, protein rich meal!
butter or olive oil as needed to season the skillet or pan & fry the eggs
Instructions
Gently crack the eggs to a heated non stick pan or seasoned iron skillet.
Keep the heat in medium low, sprinkle salt and seasonings (I used garlic, onion powders and black pepper here), and cook for about 1 to 2 minutes until the whites are set and the egg yolks are beginning to set.
The yolks need not be completely cooked at this point, but they shouldn't be runny either.
The best timing to flip the eggs is when the egg yolks are beginning to set so it won't spread much as you flip over.
Once the egg whites are set and the yolks are slightly set, gently flip over the fried eggs (you may gently break the egg yolks just before flipping if you wish) using a good spatula and cook for another 1 to 2 minutes until the yolks are completely cooked through.
To see if the yolks are completely cooked, you can use a fork to break the yolks or gently break the yolks using the spatula to see if the insides are well cooked.
You may also cover the pan with a lid and cook for about a minute or so, which will fasten the process, in case the yolks still need to be cooked through.
You may add more seasonings like more black pepper if you wish!
Serve with toast or pancakes or anything you like for a quick, easy, nutritious and delicious breakfast or brunch or any meal as you wish!
Notes
If you are a beginner in making fried eggs, it may be difficult to flip all the eggs when you fry multiple eggs together in the same pan, because as the eggs are fried the whites will spread and stick together.One way is to just fry one egg at a time, if that is more easy for you.Another way is to just break the fried eggs using a sptual through the whites where they are joined, and gently flip each individual fried egg carefully.
