  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper powder adjust to your preference

I used an oven safe non stick skillet here for roasting the colorful cauliflower in the oven.
  • Add salt, lemon juice, olive oil and spices, mix well using a large spoon or spatula so the seasoning is well mixed with all the florets evenly. Arrange the florets in a single layer in the baking pan.

  • Enjoy the delicious, roasted rainbow colored cauliflower florets as a vegetable side dish with lunch or dinner or enjoy as a healthy snack.
  • You may add little more lemon juice, black pepper etc or you can also add other seasonings like red chili flakes if you wish, to make it more spicy!
  • You can also add the roasted rainbow colored cauliflower to salads, pasta, rice etc to make the dishes look more colorful and also to make them more healthy!

Notes

Substitute for frozen rainbow cauliflower florets

If you do not have frozen rainbow cauliflower florets, you can use fresh cauliflower too.
If you use fresh cauliflower, the roasting time will slightly reduce, so it is a good idea to check the cauliflower after about 20 minutes of baking time.
Also, you may use any color cauliflower that is available to you.
If you use just purple cauliflower or orange cauliflower or green cauliflower or the usual white cauliflower it should work fine.
Just make sure to use almost the same amount of cauliflower to use in this recipe or you will need to adjust the seasonings as needed.
