Jammy Over Medium Fried Eggs For Breakfast

Easy, perfect over medium fried eggs that have only slightly runny yolks unlike over easy eggs and no completely cooked yolks like over hard eggs!

Ingredients

  • 2 large eggs
  • 1 tablespoon oil or butter, as need to fry the eggs
  • salt adjust to taste
  • ¼ teaspoon black pepper powder adjust to your preference
  • ½ teaspoon garlic powder optional

Instructions

  • Heat a seasoned skillet or non stick pan and gently crack the eggs into the heated pan. If needed, you may crack the eggs into a separate bowl first and then gently transfer them to the pan.
  • Add butter or oil need to fry the eggs and sprinkle salt, garlic powder (if using) and also black pepper.
  • Cook the eggs until the whites are completely set which will take around 2 to 3 minutes in medium heat.
  • Once the eggs are ready to be flipped, you can see that the sides of the whites are turning light golden brown in color and starting to separate from the pan.
  • It is very important that you wait until the whites are completely cooked to flip the eggs, because you will only get few seconds to fry the other side of the eggs once flipped.
  • Once flipped, if you cook for longer time, the egg yolks will cook more than medium and will have the texture of over hard or over well eggs (well done or completely cooked yolks which we don't want since we are trying to make over medium eggs here).
  • So once the whites are completely set and started separating from the sides (at this point, the yolks would be slightly set but not completely cooked), gently flip the eggs without breaking the yolks.
  • If you are a beginner and if you find it difficult to flip both the eggs together, you can gently separate the whites where they are joined using a good spatula, and flip each of the eggs seaparately and carefully.
  • Once the eggs are flipped, you need to cook only for about 30 to 45 seconds for over medium eggs. If you cook for longer time, the yolks may get completely cooked which is not preferred.
  • Once the other side is cooked for about 30 to 45 seconds, gently flip the eggs again and see if the eggs are cooked to your desired consistency.
  • If necessary, you may cook for few more seconds.
  • Keep in mind that the egg yolks quickly change from over medium to well done completely cooked eggs, so you need to act quickly to prevent overcooking of the eggs, if you don't want completely set yolks.
  • Once the eggs are done to your liking, carefully transfer the eggs to a serving dish.
  • If you break the yolks using a fork or spatula, the egg yolks will be slightly runny but not too runny and will have a jelly like texture. If you place fork or spoon over the yolks, the contents will slightly stick to it.
  • Enjoy the easy and delicious, fried over medium eggs along with toast or pancakes or stir fried vegetables or anything you like for breakfast or brunch or snack!
  • You may sprinkle more black pepper, salt or any seasonings of your choice as well!
