Ingredients

  • 6 large duck eggs (or more, just make sure they can be placed in a single layer in the pot)
  • 2 cups water
  • ½ teaspoon baking soda or salt

to make ice water bath:

  • 1 cup ice cubes or as needed
  • cold water as needed to fill in half of a large bowl

Instructions

  • Wash the duck eggs very well (they are more delicate than chicken eggs, so you may need to handle them more carefully).
  • Place the eggs in a single layer in the inner pot of the instant pot pressure cooker.
In 6 quart instant pot, you are usually able to place upto a dozen eggs (12 large eggs) without issues in a single layer but you can boil just fewer number of eggs as well.
Make sure you do not move the instant pot once the eggs are placed, this is to avoid the eggs from breaking.
  • Carefully add water (the water should barely cover the eggs), and sprinkle baking soda or salt.
  • Close the instant pot pressure cooker with lid in sealing position.
  • Cook in high pressure for 8 minutes.
  • Once the cooking is done, wait for a natural pressure release for 5 minutes.
  • Meanwhile, prepare the ice bath by filling a large bowl with cold water upto about half of the bowl and add the ice cubes. Keep this aside.
  • Once the pressure is released naturally for 5 minutes, carefully and gradually do a manual pressure release to release any remaining pressure.
  • Once the pressure is all released, carefully open the lid of the instant pot.
  • Carefully tansfer each egg to the bowl with with ice cubes and water for ice water bath. This is an important step since it prevents further cooking of eggs by cooling it down immediately.
  • Let the eggs sit in the ice water bath for at least 5 minutes time. If you are not in a hurry, it is a good idea to do the ice water bath for several minutes more.
  • Once the eggs are cooled in the ice water bath, you can peel off the shells of the boiled eggs easily. If needed, you can rinse the peeled eggs to get rid of any bits of shells.
  • Transfer the prepared boiled eggs to a serving dish. Enjoy for breakfast or brunch along with toast for a quick, nutritious meal or you can enjoy the duck eggs as a filling protein rich snack or enjoy as a side dish with lunch or dinner.
  • You can use the hard boiled duck eggs to make hard boiled egg sandwich, deviled eggs, egg curry, egg salads etc.
  • If not using right away, make sure to store the eggs refrigerated in food containers for another 2 to 3 days!
