Savory Chickpea Flour Pancakes Without Sugar

Ingredients

  • 1 cup chickpea flour
  • ½ cup yogurt
  • 1 cup water
  • salt adjust to taste
  • 1 teaspoon baking powder optional
  • ½ teaspoon onion powder
  • 2 tablespoons dried minced onions
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika or red chili powder
  • 2 tablespoon olive oil plus as needed to grease the pan

Instructions

To make chickpea flour batter for pancakes:

  • Place the chickpea flour in a large bowl.
  • Also add salt, baking powder, garlic and onion powders, mix well so the ingredients are evenly mixed.
  • In a different bowl, add the yogurt and whisk well so there are no lumps and the yogurt is smooth.
  • Add the water to yogurt and mix well to form a diluted mixture.
  • Add this yogurt and water mixture to the dry chickpea flour mixture slowly and mix well so that there is no lumps or dry flour left in the bowl.
    Alternatively, you can first add whisked yogurt to the dry flour, mix with the flour and then add the water to make the pancake batter!
  • If there is any lumps formed during the mixing and if the mixture is not smooth, you can continue to mix using a spoon or you may run it through a blender or food processor to make it easy.
  • Once the mixture is formed, also add dried minced onions, oil and paprika (or red chili powder) and mix well to combine with the batter.

To make the chickpea flour pancakes:

  • Grease a non stick pan or iron skillet and heat it.
  • Once the pan is hot, add two ladles of batter on to the pan and let it cook for a couple of minutes. You may add little more oil if necessary. Also, if you want to fasten the cooking process, you may cover the pan with lid and continue cooking.
  • Once the first side is cooked, carefully flip the pancake and cook the other side too, for another couple of minutes.
    You may flip and lightly cook the first side one more time if you wish, so the chickpea flour pancake texture will be more nice with golden brown spots on it!
  • Once it's done, transfer the pancake to a serving dish. Similarly cook all pancakes until the batter is over.
  • Enjoy the hot, delicious chickpea flour pancakes as they are or you can serve them with any pickles, chutney, curry, yogurt, vegetables, fries etc or any side dishes like fried eggs, boiled eggs, roasted potatoes, hashbrowns etc based on your choice!
