Ingredients

Instructions

  • Place the flour in a large bowl.
  • Add baking powder and mix well with the flour.
  • Add the leftover cranberry sauce also to the flour and mix with the flour to form a crumbly mixture.
  • In a different bowl, beat well the eggs.
  • Add sugar also to the beaten eggs, stir well to combine.
  • Also add olive oil and vanilla extract to the egg sugar mixture, stir well to combine.
  • Add the wet ingredients mixture (eggs, sugar, oil, vanilla mixture) to the dry flour mixture, mix everything well to form the cranberry bread batter.
  • Preheat oven to 350 degree Fahrenheit.
  • Preapare a loaf pan greased with little oil and lined with parchment paper.
  • Add the cranberry bread batter to the prepared baking pan.
  • Place the baking pan in the preheated oven and bake for about 40 minutes.
  • Then, increase the oven temperature to 375 degree Fahrenheit and bake for another 25 to 30 minutes until the bread is completely cooked (a toothpick inserted at the center of the bread should come out clean once it is fully baked).
  • The top of the bread usually will have cracks and will have a golden brown color, while the inside will be slightly pink color from the cranberry sauce!
  • If the inside of the bread is not completely cooked after the top is browned, cover the top of the baking pan with foil and continue baking for another few more minutes until the bread is completely baked.
  • Once the bread is baked, immediately transfer it from the hot oven and allow the bread to cool down. When the cranberry bread is cooled enough, slice and serve it along with tea, coffee or milk as you like!
