Sauteed, Caramelized Onions And Mushrooms On Stove Top
Sauteed, caramelized onions and mushroom makes easy, healthy and delicious mushroom side dish that goes great with rice, noodles etc or you may use it as filling for sandwiches, tacos, burritos etc or as topping for pizza!

Slice the onions in slightly thin long slices and transfer it to a large frying pan.
Also add the olive oil and enough salt, let it cook for few minutes until the onions begin to wilt.
Keep the heat in medium and sautee the onions for about 20 to 30 minutes or until the onions are almost browned and caramelized to your preference.
Stir the onions in between and adjust the heat between medium low so the onions won't get burnt during the process (you may also use a non stick pan for making it easier).
You will need to cook for only lesser time if you only want lightly caramelized onions! For deeper brown color, you will need to saute the onions for few more minutes.
While making caramelized onions or just sauteed onions, make sure you stir the onions often in between to avoid the onions burning at the bottom of the pan and for even cooking.
Once the onions are caramelized to your preference, you can add sliced mushrooms to the pan (which is washed and cleaned).
Cook the thinly sliced mushrooms in medium heat for about 3 to 4 minutes until the water is released from the mushrooms and they are lightly cooked.
Add butter and enough salt, stir well and continue cooking for another 2 to 3 minutes.
Add the remaining ingredients also to the pan - soy sauce, tamarind sauce, garlic and black pepper, mix everything well and saute for another 3 to 4 minutes until the water is all evaporated and the mushrooms are well sauteed!
Serve the caramelized onions and mushrooms while it's still hot for best results! You can add more seasonings like even more black pepper or red chili flakes if you like!
