Blueberry Chocolate Chip Pancakes With Frozen Blueberries

  • Place the flour in a large bowl. Add baking powder and salt, mix well to combine evenly with the flour.
  • In a different large bowl, beat the eggs.
  • Add the sugar also to the beaten eggs and mix well.
  • Add oil, milk and vanilla extract also to the egg sugar mixture and mix well to combine.
  • Pour this prepared egg mixture to the dry flour mixture, stir in to combine, make sure there is no dry flour left at the bottom of the bowl.
  • Finally add the chocolate chips and frozen blueberries also to the batter and gently but evenly mix in. If you mix too much after the blueberries are added, they may break and the pancakes may have a slight purple color.

To make the pancakes:

  • Pour one ladle of batter onto a greased, heated iron skillet or non stick pan.
  • Let it cook for about a minute or two in medium heat until bubbles begin to appear.
  • Then, carefully flip the pancake and cook the other side too. While you flip blueberry pancakes, sometimes the berries might fall off the pancakes but you can easily just move it towards the side of the pancake using the spatula or spoon and that should be fine!
  • Once the other side of the pancake is also cooked, transfer the prepared pancake to a serving dish.
  • Similarly prepare all pancakes until the batter is finished.
  • Serve the delicious blueberry chocolate chip pancakes for breakfast or brunch, topped with maple syrup or fresh fruits or honey or whipped cream, sauce etc as you like!
  • You can also use blueberry sauce or compote for even more blueberry flavor or you can use caramel sauce or chocolate sauce if you like to make it taste for sweet like dessert.
