Sweet Cream Pancakes Using Heavy Whipping Cream

  • Place the all purpose flour in a large bowl.
  • Also add baking powder and mix well to combine evenly with the flour.
  • In a different bowl, beat the eggs and add the sugar to it. Stir the sugar very well to mix with the beaten eggs.
  • Take the heavy cream in a different large bowl.
  • Also add the egg sugar mixture to it, mix well to combine with the heavy cream.
  • Add the milk and vanilla extract also to the heavy cream mixture, stir well to combine.
  • Now add this heavy cream egg milk mixture to the dry flour mixture.
  • Mix well to combine to form the pancake batter, make sure there is no dry flour left at the bottom of the bowl. The sweet cream pancake batter is somewhat sticky and thick in texture, but it is of a consistency that you can pour the batter without any trouble, to make the pancakes.
  • If your batter is too thick and if you find it difficult to pour to the pan, you may add little extra milk (about 1 to 2 tablespoons at a time) and mix well with the batter to adjust the consistency of the batter!

To make the pancakes:

  • Pour one ladle of batter on to a heated non stick pan or greased cast iron skillet.
  • Cook in low to medium heat for couple of minutes until bubbles appear on top of the pancakes. This might take a little longer than regular pancakes since the batter is quite thick and dense in texture.
  • Once bubbles appear on top of the pancake, gently flip the pancake to cook the other side too. Add a little butter or olive oil (or another oil) to the pan if needed, to make the job easier.
  • Once the pancake is cooked, transfer the prepared pancake on to a serving dish (you can insert a toothpick through the center to see if it comes out clean to make sure it's completely cooked, this is always not necessary while cooking pancakes but these pancakes are dense and thick though they are also very fluffy!).
  • Similarly cook all the pancakes until the batter is finished.
  • Serve the delicious, fluffy sweet cream pancakes with pure fresh maple syrup, fresh fruits, fruit sauces like blueberry sauce, strawberry sauce etc or whipped cream as you like!
