Homemade Blueberry Pancakes With Frozen Or Fresh Blueberries

Homemade blueberry pancakes using fresh or frozen blueberries is easy to make and delicious too.

To make the blueberry pancake batter

  • Transfer the washed blueberries to a bowl and add one tablespoon of sugar, mix well and keep aside.
  • In another large bowl, mix together the dry ingredients - flour, baking powder and salt.
  • In a different bowl, add the egg and beat well.
    Also add the melted butter (or oil), remaining one tablespoon of sugar and mix well to combine with beaten eggs.
    Also add the milk and vanilla extract to the beaten egg butter sugar mixture, whisk well until the wet ingredients mixture is formed.
  • Pour the wet ingredients mixture to the dry flour mixture and mix well without any lumps.
  • Also the add the sugared blueberries and mix the batter gently so the blueberries are evenly mixed with the batter. Now the blueberry pancake batter is ready.
  • If you are using frozen, thawed blueberries, you may notice a purple color to the batter. This doesn't usually happen if you are using fresh blueberries.

To make the blueberry pancakes

  • Heat a nonstick pan or iron pan or skillet, or a pancake pan, grease with butter.
  • Pour a small ladle of pancake batter to the pan, keep the heat in medium to low adjusting as needed.
  • Wait for a coupe of minutes so the pancakes will get cooked on the bottom side and holes will appear on top of the pancakes.
  • Gently flip the pancake and cook for another minute so the other side too will get cooked.
    As I mentioned earlier, even if one or two blueberries fall out of the pancake while flipping, it is totally fine as you can just fix them back once the pancake is completely cooked.
  • Gently transfer the cooked pancake to the serving dish or container and cook all the pancakes the same way until all the batter is finished.
  • Serve the delicious blueberry pancakes with butter or maple syrup or any topping (like fresh blueberries) or blueberry sauce for pancakes as you wish!
