Strawberry Spinach Salad With Lemon Olive Oil Dressing

This easy strawberry and spinach leaf salad with crunchy cashew nuts and olive oil lemon juice dressing is delicious, simple, quick and easy to prepare too.

Ingredients

  • 2 cups fresh strawberries
  • 1.5 cups fresh baby spinach leaves or use regular spinach
  • 1 cup cashew nuts raw or roasted unsalted cashews
  • salt as required
  • 1 tablespoon Olive oil
  • 2 teaspoons Lemon juice

Instructions

  • Wash the strawberries and spinach leaves thoroughly. You may wash them in a vinegar solution if you like to make sure they are clean.
  • Slice the strawberries in half lengthwise and transfer it to a large bowl.
  • Add the washed spinach leaves and cashews to the bowl and mix the contents together.
  • Make a simple salad dressing by mixing together the salt, lemon juice and olive oil together in a small bowl.
  • Add this simple dressing to the salad and gently toss the salad to blend well with the dressing. You may add more oil or salt if you wish.  Transfer the salad to a salad serving bowl, serve and enjoy!
  • If you are preparing this salad for later use, make sure to refrigerate the salad until ready to serve so the ingredients will remain fresh.
    The salad will remain fresh in refrigerator (if stored properly) for another couple of days.

Notes

If the spinach or strawberries are frozen or cold, you may microwave the contents for few seconds for a warm bowl of fruit veggie salad if you wish.
