Simple Egg Fried Rice Without Soy Sauce Or Vegetables

This easy and simple egg fried rice recipe without soy sauce or any veggies or even sesame oil can be prepared so quickly and easily and makes a kid friendly egg rice dish which can be served for lunch or dinner or can be packed for tiffins for lunch.

Ingredients

  • 2 large eggs
  • 1 tablespoon whole milk
  • 1.5 cups leftover cooked white rice
  • salt as needed
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • black pepper powder a pinch, optional

Instructions

  • In a bowl, whisk well the eggs along with milk and enough salt.
  • Heat a medium sized skillet and add one tablespoon of butter.
  • Add the egg mixture to the skillet and wait until its almost cooked, then scramble it using a good spoon or spatula. Just scramble the eggs in the skillet as slightly large pieces.
  • As the eggs are scrambled, add the cooked rice, enough salt and also the garlic powder, mix everything well.
  • Add the remaining butter to the skillet, keep medium heat and stir fry the contents for about 4 to 5 minutes until the rice is lightly fried and flavorful. You may adjust the heat between low and medium as needed. Make sure to stir fry the rice very well until its delicious and perfect. Sprinkle the black pepper powder if using, stir well everything together. Serve hot with chips, veggies etc for lunch or dinner.

Notes

In case the rice is more buttery than you prefer, you can gently press the contents with a paper towel which will absorb the extra butter.
If you have spring onions or green onions, it is great to add one to two tablespoons of thinly sliced green onions (or spring onions/scallions) along with the scrambled eggs to make the fried rice more tastier.
You may use a little of the onions to garnish the fried rice as well.
