Dry Potato Masala Simple & Easy Recipe With Indian Spices

This dry potato masala with spices makes a simple, delicious side dish with rice (pairs great with rice, yogurt and pickles) and you may also enjoy it as a side of filling with any bread as you like.

  • 6 medium sized potatoes
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon red chili powder
  • 2 tablespoons coriander powder
  • 1 teaspoon garam masala powder
  • 4 tablespoons oil or take enough to shallow fry the potato cubes
  • salt adjust to taste


  • Wash the potatoes, peel them and cut into similar sized cubes.
  • Heat oil in a pan and add the potato cubes.
  • Cook in low to medium flame for about 6 to 7 minutes so that the potatoes gets crispy on one side, just make sure you watch the potatoes so as to avoid burning.
  • When one side of the potato cubes are fried, you can gently flip them using a spatula. If the potato cubes are sticking to the pan, it needs more time to get fried.
  • Once you flipped the potatoes, let it get fried on the other side too, this takes about 4 to 5 minutes.
  • The potato cubes are fried enough when they are slightly crispy on sides, and they don't stick to the pan.
  • Now add about ½ cup of water and also salt to the potatoes.
  • When the water starts boiling, turn the stove to low and then cover the pan and cook the potatoes for about 8 to 10 minutes.
  • After 8 minutes, open the pan, gently mix the potatoes and add the spices - turmeric, red chili, coriander powder and the masala.
  • Mix everything well and let it get slightly cooked in the open pan. Add little more oil if needed.
  • Spicy potato masala is ready when the water is completely evaporated and the spices are well coated to the potatoes!Serve the potatoes hot or at room temperature with rice or any bread as you wish, or use them as a filling for any stuffed bread or other recipes!
