Instant Pot Cabbage Thoran (Cabbage Poriyal) Cabbage Coconut Stir Fry

Instant pot cabbage thoran or cabbage poriyal is stir fried South Indian style cabbage prepared in the instant pot which makes a very easy, simple, delicious vegetable side dish for rice. This dish is vegetarian as well as vegan.

  • 8 cups cabbage shredded (medium sized pieces)
  • 1 cup coconut dessicated or grated (I used dessicated coconut)
  • 2 green chilies optional
  • salt adjust to taste
  • ¼ cup water


  • 1 teaspoon turmeric powder
  • ½ teaspoon red chili powder optional
  • ¼ teaspoon cumin seeds powder
  • 1 teaspoon garlic powder use freshly crushed garlic instead
  • 1 teaspoon onion powder

For seasoning

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds or cumin seeds
  • 5 red chilies dried broken (you may skip this if you don't have)
  • 1 string curry leaves make sure no water in leaves if using (you may skip this if you don't have fresh curry leaves)


  • Add the oil to the instant pot and press saute.
    Once the oil is hot, add mustard seeds.

  • Once the mustard seeds splutter, add the broken red chilies & curry leaves (if using) and lightly fry.
    Add the shredded cabbbage (and sliced green chilies if using), stir well and saute for about a minute.

  • Add salt and all spice powders, mix well and saute for another 1 minute. Press cancel so the saute function will stop.

  • Add the water (¼ cup do not use more water) and mix well.

  • Close the instant pot with lid in sealing position and cook in high pressure for 1 minute.
    Wait for a natural pressure release for 5 minutes, then carefully do a gradual manual pressure release to slowly release the remaining pressure (the steam release will be very hot, so do this very carefully).
    Once the pressure is all released, carefully open the lid and stir the contents (if there's a little water remaining at the bottom of the pot, it is fine since we are going to add the coconut).

  • Add the dessicated coconut (if using freshly grated coconut, coarsely grind the coconut before adding to the instant pot), stir well with the cabbage.

  • Press saute button and saute the mixture for a couple of minutes, stir in between.

  • Once the mixture is sauteed, press cancel to stop the saute, unplug the instant pot and transfer the inner pot to a cool place so it won't cook further.
    Now the cabbage thoran is ready you can serve the delicious instant pot cabbage with rice for lunch or dinner along with any other curry like moru curry, pulissery or sambar!
