Wash the potatoes very well in water and clean them. You may peel the potatoes or you may keep the skin of the potatoes if you like. Also prick the potatoes using a knife which will allow some steam to escape while its cooking.
Place the potatoes in the instant pot.
Add the one cup of water and close the instant pot with lid in sealing position.
Press pressure cook or manual button and cook in high pressure for 30 minutes. If you want it too soft in texture, cook for an additional 5 minutes.
Once the cooking is done, the pot will beep and you can press the "keep warm/cancel' button.
Wait for a natural pressure release.
Once the pressure is all released, carefully open the lid. You can carefully transfer the cooked potatoes to a serving dish and use a fork to see if they are cooked completely until soft and tender in texture.
The soft cooked, tender potatoes are ready to be used to make mashed potatoes or potato sandwiches, curry, stew, soup etc!
