Oven roasted baby red potatoes with garlic are super easy to make from scratch at home, it is delicious and makes a quick, nice side dish for dinner or any meal.

Ingredients

  • 1 lbs baby red potatoes
  • salt as needed
  • 2 teaspoons garlic powder or fresh garlic minced
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon black pepper powder optional

Instructions

  • Wash the baby red potatoes very well, make sure there's no dirt or sprouts in the skin.
  • Slice the baby potatoes in halves and transfer them to a large bowl.
  • Add oil, garlic, onion powder, salt, lemon juice and black pepper powder, mix everything well with the potatoes.
  • Preheat oven to 450 degree Fahrenheit.
  • Line a baking sheet with good quality aluminium paper and place the seasoned potatoes in a single layer.
  • Bake for about 30 minutes until the potatoes are lightly browned!
    In this recipe, we baked the diced red potatoes at 450 degree Fahrenheit for faster results however if you want to bake the red potatoes at 400 degree Fahrenheit, you will need to bake for few more minutes about 40 to 45 minutes in total depending on your oven temperature.
  • Enjoy the delicious roasted baby potatoes while they are still warm for the best results!

Notes

Though they taste the best while they are still warm, they also taste great while cooled to room temperature.
You can enjoy them as an easy, delicious snack if you love potato snacks or you can serve them as a quick side dish with dinner or any meals.
You may also add butter or cheese to the roasted baby potatoes, just like you do for baked potatoes, to make them even more delicious.
