Instant Pot Boiled Small Baby Red Potatoes (Mini Potatoes)

Boiled baby red potatoes with skin on is perfect for snack, side dishes etc as you can easily season them with salt, pepper etc or your favorite seasonings or you can quickly turn them into buttered potatoes for an easy snack. These baby red potatoes are soft boiled so they are also perfect to make mashed baby red potatoes with skin on easily!

Ingredients

  • 24 oz baby red potatoes equivalento 1 lbs and 8 oz (you may use little less amount of potatoes too, just make sure not to use more so they can be arranged in a single layer in the pot for best results)
  • 1 cup water
  • salt as needed

Instructions

  • Wash the baby red potatoes very well and add them to the instant pot.
  • Also the water and salt, gently mix in. Make sure to place the baby potatoes in a single layer so they get cooked evenly.
  • Cover the instant pot with lid in sealing position and cook in high pressure for 15 minutes.
  • Wait for a natural pressure release for about 12 minutes, then do a careful gradual manual pressure release to release any remaining pressure.
  • Once the pressure is all released, carefully open the lid of the instant pot.
  • Transfer the boiled baby potatoes to a serving bowl and season with salt and pepper or add any seasonings, olive oil etc as you desire.
  • If you wish to make buttered baby red potatoes, drain all water from the pot and press saute.
  • Once the water content is all gone from the pot, add about 2 tablespoons of butter.
  • Once the butter melts, saute the potatoes in the butter for couple of minutes to make delicious buttered potatoes!
  • Make sure to serve the prepared baby red potatoes while it's still warm for best results!
