Watermelon Blueberry Kale Salad With Mint, Honey And Lemon

Refreshing and colorful watermelon blueberry kale salad is perfect for hot summer months or cold winter months and holidays if you have fresh watermelon and berries!
This easy, simple mixed fruit and green veggie salad is even more tastier by the addition of a slightly sour, tangy and sweet honey lemon salad dressing which is so easy to make at home.

Ingredients

  • 1 cup watermelon sliced into cubes
  • 1 cup fresh blueberries
  • ½ cup fresh baby kale leaves
  • fresh mint leaves a few

for salad dressing:

  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Instructions

  • Place the watermelon slices in a large bowl.
  • Wash the blueberries and kale leaves very well, drain any water content and add to the bowl with watermelon.
  • In a different bowl, mix together honey and lemon juice to make the salad dressing.
  • Pour the prepared honey lemon salad dressing over the bowl with watermelon (pour the dressing across the bowl so it helps distribute the dressing evenly), blueberries and kale, gently mix in so the salad dressing is evenly mixed.
  • Once the salad is made, transfer the salad to a serving salad bowl, discard any extra water content from the bowl which is used to make the salad.
    This is because, watermelon has a lot of water content and it can make the salad very watery over time.
    It is a good idea to discard any leftover liquid in the first place and just transfer the salad to the salad bowl (in fact, the leftover liquid is so delicious you can just drink it if you like!).
  • Garnish with few fresh mint leaves, serve immediately for best results!
    If you keep this for longer time, the water from the fruits (especially watermelon) may make the salad soggy.
