Balsamic Roasted Broccoli & Cauliflower

Oven roasted frozen cauliflower and broccoli florets with balsamic vinegar, salt, oil and seasonings makes a quick, easy, healthy and nutritious vegetable side dish!

Ingredients

  • 16 oz frozen broccoli
  • 16 oz frozen cauliflower
  • salt adjust to taste
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • lemon juice & pepper for seasoning roasted vegetables (1 teaspoon or as you prefer)

Instructions

  • Preheat oven to 425 degree Fahrenheit.
  • Add the frozen broccoli to a large bowl.
  • Also add the frozen cauliflower to the same bowl.
  • Add salt, garlic powder and paprika.
  • In a small bowl, mix balsamic vinegar and olive oil and mix well.
  • Add the balsamic vinegar olive oil mixture to the frozen vegetables.
  • Using a good quality spatula, toss the ingredients so the frozen broccoli and cauliflower florets are well mixed with the seasoning.
  • To roast the seasoned broccoli and cauliflower florets, layer a large baking sheet with good quality aluminium foil.
  • Place the seasoned cauliflower and broccoli in a single layer.
  • Bake in the preheated oven for about 30 to 35 minutes until they are lightly browned and roasted to your preference!
  • Enjoy the roasted cauliflower and broccoli while they are still warm for the best results! Once the roasted vegetables are traferred to a serving dish, you can sprinkle lemon juice and black pepper powder as you prefer or you can also add red chili flakes if you want it more spicy!
  • Enjoy the roasted vegetables for a healthy, nutritious snack or side dish for any lunch or dinner!
