Ingredients

  • 3 large eggs
  • 2 pepper jack cheese slices
  • salt adjust to taste
  • ¼ teaspoon black pepper powder
  • 2 tablespoons butter

Instructions

  • Melt the butter in a heated pan and crack the eggs to the pan carefully.
  • Add salt and black pepper, let it cook in medium heat for couple of minutes.
  • Scramble the soft cooked eggs, add the pepper jack cheese slices on top (you may slice the cheese slices into small pieces for fast melting). Cook for another one more minute in low heat and move the pan away from heat to stop further cooking.
  • Let it sit couple of minutes so the cheese will completely melt onto the scrambled eggs. Serve hot with rice, serve over toast, use it as a sandwich filling or burrito filling etc as you wish!
