Eggnog French Toast With Leftover Eggnog For Holiday Breakfast

Eggnog french toast using leftover eggnog holiday drink makes the best, easy and delicious Southern style holiday breakfast for Christmas or holidays!

Ingredients

  • 8 slices bread I used regular white sandwich bread
  • 1 cup eggnog I used store bought non alcoholic eggnog. you can also use the leftover homemade eggnog!
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 4 tablespoons butter
  • 2 tablespoons sugar optional, adjust to taste

Instructions

To make the eggnog french toast batter:

  • Add the eggs to a medium to large sized bowl and beat the eggs well.
  • Add the sugar, vanilla extract and cinnamon powder, mix well to combine with the eggs until the sugar is dissolved and the vanilla and cinnamon are well combined with the egg mixture.
  • Now add the eggnog to the egg mixture and mix well to combine well with rest of the ingredients to form the batter for eggnog french toast!

To make the eggnog french toast:

  • Melt about 1 tablespoon of butter in a good quality non stick pan.
  • Once the butter is melted, carefully dip the first slice of bread in the batter and place the bread in the pan. If there is enough space in the pan (enough to flip the bread easily), dip the second slice of bread also in the batter and place it also in the pan (based on the size of the pan you can adjust how many slices of bread you can toast at a time, make sure the pan is not over crowded since we need to flip them).
  • Now, let the bread get cooked and toasted on one side for about 1 to 2 minutes (keep the heat in medium since low heat will make it too long to cook and high heat will quickly brun the bread).
  • If any batter spreads from the sides of the bread, you can use a good quality spatula to move it towards the bread.
  • Now carefully flip the bread slices and cook and toast the other side of the bread too. Make sure both sides (and the edges) of the bread slices are well toasted and lightly golden brown in color. If necessary, you can flip it a couple more time until it's golden brown in color.
  • Once the bread slices are well toasted and golden brown on both sides, transfer the toasted bread slices to a serving dish.
  • Now add another tablespoon of butter (you may reduce the amount of butter if you wish) and toast another 2 slices of bread (after dipping in the batter) the same way.
  • Similarly toast all bread slices after dipping them in the batter and transfer all the toasted bread slices to a serving dish!
  • Serve the eggnog french toast hot for best results! They are delicious on it's own but you can serve the french toast with maple syrup, honey, fresh fruits like sliced bananas or strawberries, powdered sugar, chocolate syrup etc as you wish!
