Ingredients

Instructions

  • Place the flour in a large mixing bowl. Add baking powder and mix well to combine evenly with the dry flour mixture.
  • Add bananas (roughly chopped) to the bowl, also add milk, vanilla extract and peanut butter, mix everything together using a wooden ladle to combine evenly with the flour mixture.
  • Also add the olive oil and eggs to the midlle of the mixture, using the wooden ladle break the eggs and mix well, then once the eggs are beaten well mix well the oil and beaten eggs to the rest of the ingredienst until all ingredients are well combined to form the pancake batter (make sure to beat the eggs well, if it's difficult for you to do in the same bowl, you can use a different bowl to beat the egg mixture first and then add it to the rest of the ingredients to combine evenly).

to make the pancakes:

  • Heat a non stick pan and brush with a little oil or butter.
  • Add a ladle full of pancake batter to the hot pan (it's a good idea to keep the heat medium high and adjust as needed).
  • Cook for about a minute until bubbles begin to appear at the top of the batter.
  • Then carefully flip the pancakes and cook the other side too (for about a minute) until the pancake is cooked completely (you may insert a toothpick to see if the batter is cooked inside).
  • Once the pancake is cooked, transfer it to the serving dish.
  • Similarly, cook all pancakes until the batter is finished.
  • Serve with butter, sliced bananas etc or serve with pure fresh maple syrup or honey or jams or spreads or any toppings you like!
