Quick Same Day Focaccia Style Bread - Simple, Easy, Fluffy

Easy, quick same day focaccia style bread that's baked after a single rise of dough that need only minimal kneading or no kneading at all!

  • Place the flour in a large mixing bowl, add salt and mix well to combine evenly with the flour.
  • Add yeast to warm water in a bowl, also add sugar. Let this mixture sit for about 20 minutes.
  • Once the yeast mixture is ready, mix well and add to the dry flour mixture.
  • Mix using a spoon until all ingredients are well combined. Now also add the oil and knead gently for a couple of minutes to form the dough. The dough will be very sticky and wet in texture which is fine!
  • Keep the dough covered for about 2 to 3 hours time so the dough will rise and double in size.
  • Once the dough is doubled (almost is enough also), let's proceed to bake the bread!
  • Preheat oven to 425 degree Fahrenheit.
  • Prepare a baking tray or pan greased with butter. I used steel baking pan that's rectangled shaped so it baked similar to focaccia bread, but it's a good idea to use non stick pan (rectangle or square shaped with space for the bread to spread as it bake for similar results) because the dough is sticky and once the bread is baked, it might be a little tricky to get it out of the pan easily if you are not used to handling it with a steel baking pan. If you use parchment paper to solve this issue (so the bread won't stick to the pan), make sure to use a parchment paper that's safe to use at 425 degree Fahrenheit for safety reasons.
  • Now transfer the dough to the prepared baking pan, I just moved the dough to a rectangle loaf pan where it spread on it's own while baked. If you want the bread to be shaped more like focaccia, you can stretch the dough yourself inside the pan and make some depressions on top using your fingers so the bread will have the nice patterns on top. Also add any toppings like rosemary or garlic if you wish!
  • Cover the pan with an oven safe lid or cover with aluminium foil and bake in the preheated oven for about 25 minutes. After this, remove the foil and bake in open pan for another 15 to 20 minutes until the bread is browned on top and baked through! You may insert a toothpick through the center of the bread to see if it's cooked through.
    The total baking time of the bread is around 40 to 45 minutes, and we bake the first half covering the pan with a lid or foil and we bake the second half with the open uncovered pan.
  • Once the bread is baked, transfer the baked bread immediately from the hot oven to a cool place.
  • Allow the bread to cool down completely and once it's cooled, gently transfer the bread (I used a butter knife to carefully separate it from the sides of the pan) to a serving dish, slice and serve with cheese, butter etc as you like! You can add a little cheese (shredded works great) on top and microwave for about 30 to 40 seconds for a cheesy bread or top the sliced bread withs some butter for a delicious homemade bread breakfast or snack!
