Bell Pepper Stir Fry - Red, Yellow Bell Peppers Stove Top Recipe

Ingredients

  • 3 large sized bell peppers I used one yellow and two red bell peppers
  • salt as needed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • ½ teaspoon turmeric powder
  • ¼ teaspoon paprika
  • 2 tablespoons oil

Instructions

  • Wash the bell peppers, slice the end with stem and scrape out the seeds.
  • Once the seeds are removed, slice the bell peppers into medium sized cubes (do not make them too small pieces!).
  • Heat the oil in a large frying pan or skillet and add the sliced bell peppers.
  • Add salt, mix well with the peppers, cover with lid and cook in low heat for about 5 to 6 minutes.
  • Once the peppers are cooked (but still crunchy in texture), open the pan, add garlic, onion, paprika, turmeric powders and mix well.
  • Stir fry in medium heat for a couple of minutes until the bell pepper slices begin to brown.
  • Add soy sauce and lemon juice to the pan, mix well the peppers and stir fry for another one minute.
  • Serve hot with rice, noodles, eggs etc for breakfast, lunch or dinner as a delicious, crunchy vegetable stir fry for a healthy, nutritious, colorful side dish for any meal!
