    I have used yellow and red bell peppers that is so colorful, easy to make and delicious stir fry to go with rice, noodles etc. If you look at the nutrition information given in the recipe, you can see that this is a vegetable stir fry that is high in Vitamin A (this is a good source of beta carotene as we have used colorful yellow and orange peppers) as well as many other nutrients.

    what are bell peppers?

    Bell peppers are colorful peppers that looks like the shape of bells, hence the name bell peppers.

    They are also known as capsicum. Bell peppers are available in different colors, depending on the stage of ripening. When they are young, they are green in color.

    But they turn yellow, orange and red as they ripen. Green bell peppers do not have any sweet flavor, but it's just enough spicy in flavor. Yellow bell peppers have the most sweet flavor and they are also know as sweet peppers with the bright yellow color. Though the red bell peppers are more ripened than yellow peppers, they lack the sweet flavor that the yellow peppers have.

    An easy, delicious way to cook bell peppers on the stove, is to make stir fries!

    They are so easy and fast to cook, and once stir fried, they have the perfect flavors just like roasted bell peppers.

    The sweet and spicy flavors combined with the right spices gives the best flavor to the vegetable stir fry made with bell peppers. They only take about 6 to 7 minutes to cook on stove top, depending on your preference for texture.

    We use the following ingredients to make this easy, delicious vegetable stir fry using bell peppers.

    • bell peppers 3 large sized (I used one yellow and two red bell peppers)
    • salt as needed
    • garlic powder 1 teaspoon
    • onion powder 1 teaspoon
    • lemon juice 1 tablespoon
    • soy sauce 1 tablespoon
    • turmeric powder ½ teaspoon
    • paprika ¼ teaspoon
    • oil 2 tablespoons

    step by step instructions

    • Wash the bell peppers, slice the end with stem and scrape out the seeds.
    • Once the seeds are removed, slice the bell peppers into medium sized cubes (do not make them too small pieces!).
    • Heat the oil in a large frying pan or skillet and add the sliced bell peppers.
    • Add salt, mix well with the peppers, cover with lid and cook in low heat for about 5 to 6 minutes.
    • Once the peppers are cooked (but still crunchy in texture), open the pan, add garlic, onion, paprika, turmeric powders and mix well.
    • Stir fry in medium heat for a couple of minutes until the bell pepper slices begin to brown.
    • Add soy sauce and lemon juice to the pan, mix well the peppers and stir fry for another one minute.
