Butter Rice In Instant Pot (And Stove Top)

Butter rice is a simple, delicious, flavored seasoned rice made using rice and butter as the main ingredients! This is so easy to make in the instant pot pressure and it is a simple, yet great tasting rice side dish with any meal for lunch or dinner!

Ingredients

  • 2 cups white basmati rice
  • 2.5 cups water or vegetable broth
  • 4 tablespoons butter
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • ½ teaspoon black pepper powder optional
  • 2 bay leaves optional
  • 1 cinnamon sticks optional

Instructions

Instant Pot Instructions

  • Wash the rice very well and add to the instant pot.
  • Also add the water (or broth), salt and spices, mix well.
  • Also place the butter on top and if you are using bay leaves and cinnamon sticks, add them too.
  • Close the instant pot with lid in sealing position and cook in high pressure for 5 minutes.
  • Once the cooking is done, wait for a natural pressure release for 10 minutes and then do a careful, gradual controlled manual pressure release.
  • Once the pressure is all released, carefully open the lid, remove the bay leaves and cinnamon sticks using long tongs and gently fluff the rice using a fork or a good quality spatula.
  • Do not stir the rice again for another few minutes and let it cool down slightly.
  • You can fluff the rice carefully once in cools down slightly (after about 10 minutes) to prevent the rice from sticking as it cools down.
  • Serve the fluffy, delicious buttered rice with any curry of your choice or any vegetable side dishes, tofu, paneer etc or any side dishes as you like!

Stove top instructions

  • Melt the butter in a large pot or pan and add the bay leaves and cinnamon sticks, if using and lightly fry them.
    Add the rice and salt and lightly fry for about a minute.
  • Add the spice powders and stir fry for another one minute.
    (To make the preparation even more easier, you may skip the above steps and directly add the ingredients along with the water or broth and butter to the pot or pan, just like I have explained in the instant pot recipe).
  • Add water or broth, mix well and bring the mixture to a boil.
    Once the mixture starts boiling, reduce the heat to low, cover with lid and cook the rice for about 10 minutes until the rice is cooked and the water is evaporated.
  • If there is any water left, you may heat the pan (without lid) in medium heat for about a minute, so the leftover water will evaporate.
    Fluff the rice gently with a fork and serve with any side dishes of your choice.
  • If you store it for longer time, do not stir the rice a lot while it's hot, but gently fluff in regular intervals so the rice won't stick.

Notes

In the instant pot preparation, you may also melt the butter in the instant pot using saute function and then lightly fry the rice, cinnamon sticks and bay leaves in butter along with the spices (for about a minute) for more flavor!
