Sweet mango sauce or mango compote made from ripe, sweet mangoes makes the perfect, delicious, tropical fruit sauce for topping pancakes, cheesecakes, ice creams, oatmeal and more!
Wash the mangoes very well, peel and dice, discard the pit.
Place the diced mangoes in a saucepan.
Also add sugar, lemon juice and water, mix well to combine with the mangoes.
Simmer the contents in medium heat (while you stir). As the mixture begins to boil, continue simmering for another 2 to 3 minutes while you keep stirring the sauce. At this point, you may also slightly mash the mangoes using a potato masher or you can just make them into smaller pieces using a spatula or spoon itself.
Cover the saucepan with lid, reduce the heat to low and cook the mangoes for another 4 minutes.
Once the mangoes are cooked, open the lid, stir the contents and turn off the heat. The sauce will further thicken as it cools down so you do not need to cook this further!
Allow the mango sauce to cool down, serve with toast, pancakes etc or use as a topping for cheesecakes like mango cheesecake or any cheesecake of your choice!
You can also use this as a delicious tropical fruit filling between cake layers, add it to your oatmeal etc for a delicious mango flavored oatmeal for breakfast or enjoy it with ice creams for dessert!
If you have any leftover mango sauce, you can transfer to clean, dry glass jars with tight lids and keep it refrigerated for about 2 weeks.
