Ingredients

  • 4 jalapenos
  • 1 cup raw cashews (I used whole cashews but you may slice in halves in you wish)
  • salt adjust to taste
  • 2 tablespoons oil

Instructions

  • First, prepare the jalapenos by slicing each pepper in halves lengthwise (make sure to use gloves to protect your hands as the peppers can be quite spicy) and remove the seeds. You may leave out a few seeds depending on your preference for spiciness.
  • Heat the oil in frying pan or skillet and add carefully add the sliced jalapenos (if you have washed the peppers, dry the peppers very well and make sure there is water content prior to adding to the hot oil).
  • Roast the pepper slices in oil for about 1 to 2 minutes in medium heat and then carefully flip the slices.
  • While the jalapenos are getting roasted, also add the cashews & salt to the pan.
  • Let the cashews too get roasted for about a minute or until it begins to brown.
  • Stir the cashew pepper mixture carefully using a good quality spatula, so the cashews get roasted on all sides and also the salt is mixed evenly.
  • The cashews turn brown pretty quickly as they gets heated, so reduce the heat if needed and transfer the pan from the hot stove once it's done to your preference.
  • Enjoy the delicious & spicy salted jalapeno cashews as a snack or side dish for any meal.
  • You may also use it as a topping with rice dishes like yellow rice, rice pilaf, seasoned rice etc which will make the rice very delicious!
