Crispy Oat Milk Chocolate Chip Pancakes

Crispy oat milk pancakes is easy eggless pancakes made using bisquick pancake mix and oat milk, which is delicious and great for breakfast, brunch or anytime!

  • Place the pancake mix (I used bisquick pancake mix in this recipe) in a large mixing bowl.
  • Add oat milk, vanilla extract and 2 tablespoons of sugar (sugar is optional), to the pancake mix, stir well to combine. Make sure there is no large lumps in flour oat milk mixture. You can use a fork to mix the batter so you can easily break down any lumps that is formed.
  • Add the semi sweet chocolate chips and mix in with the pancake batter so the chocolate chips are evenly distributed in the batter.
  • Now the oatmilk pancake batter with chocolate chips is ready!

To make crispy oat milk pancakes:

  • Heat a good quality non stick pan or skillet.
  • Add little butter or oil to grease the pan.
  • Add one small ladle of oat milk chocolate chip pancake batter to the hot pan (with this recipe, we are making small sized chocolate chip pancakes, so make sure not to put a lot of batter which could be difficult to flip).
  • As the pancake gets cooked, add little butter or oil on to the sides of the pancake for crispy edges.
  • Keep in medium heat and cook for about 2 to 3 minutes until bubbles are formed on the the top and it looks almost set.
  • Carefully flip the pancakes (without spilling the oil or butter we added to get crispy eges, the oil will be very hot) using a large, good quality spatula (this will help prevent the pancakes from falling apart while you flip the pancakes).
  • After flipping the pancake also, add little more oil or butter to the sides of the pancake which helps to get crispy edges. Cook the other side too for a couple of minutes untile the pancake is completely cooked.
  • Carefully transfer the cooked pancake to a serving dish.
  • Similarly cook all pancakes until the batter is all finished.
  • Top with maple syrup, caramel etc or top with fresh fruit, powdered sugar, fruit sauce etc or whatever pancake toppings you like the best! Serve immediately for best results!
