Instructions
Place the frozen mixed vegetables (sliced carrots and broccoli, cauliflower florets) in a large sized pan or skillet.
Cook in low to medium heat for about 2 to 3 minutes until the water from the frozen vegetables evaporate.
Add salt, garlic powder and 2 tablespoons of sesame oil, mix to coat the vegetables and cook for another 2 minutes.
Cover the pan with lid and cook in low heat for about 4 minutes time.
Once this is done, open the lid and add the remaining one tablespoon of sesame oil and also the soy sauce & lemon juice, mix well to combine with the veggies (if you are using brown sugar, red chilies and/or cashews, add that too).
Keep in medium heat and stir fry the vegetables for another 3 to 4 minutes (stir in between to avoid the vegetables burning) until the veggies are well roasted and slightly browned on the outside.Serve the stir fried mixed vegetebales as a side dish along with rice, quinoa, eggs or other proteins as you like or enjoy as a main dish along with other sides for lunch or dinner.You can also enjoy this as a healthy green veggie snack or use to make salads, toppings etc as you like!
