We use a California style blend of mixed vegetables which includes carrots, broccoli and cauliflower, which is very convenient and easy to use from the store bought frozen veggie package.
If you don't have the storebought veggie mix, you can also slice fresh vegetables on your own to make the mixed vegetables for stir fry. The texture of the stir fry vegetables is crunchy and the taste is delicious which is slightly tangy and sweet if you use brown sugar which is optional. If you like it spicy, also use the red chilies mentioned in the ingredients (optional) or you may add a teaspoon of red chili flakes or hot sauce, paprika or even black pepper powder based on your preference. And most importantly, make sure to use the best quality ingredients whether you use store bought or homemade ingredients.
In this recipe, we use frozen vegetable mix which is more easy and convenient to use, but you can also fresh veggies instead. Also, we add the ingredients necessary for stir fry sauce in this recipe, but if you have homemade or store bought stir fry sauce ready to use, you can use that in the recipe to make things even more easier!

If you make the stir fry on stove top using frozen vegetables, it is important to follow the recipe instructions to avoid getting mushy vegetables. We don't want over cooked vegetables in vegetable stir fry which is too soft in texture. The perfect vegetable stir fry has cooked but crunchy vegetables and has great flavors.
The best vegetable stir fry using frozen (or fresh) veggies is crunchy in texture and has a delicious, slightly sweet and tangy flavor. If you don't use the brown sugar if you want to keep it low sugar, you may not get the sweet flavor for the veggies but it's still delicious with other flavors from the ingredients that we use. If you like spicy flavors, I highly recommend using red chili flakes or chilies or another ingredient like paprika or black pepper or hot sauce based on your preference to add that extra spicy flavor. However, if you are making for kids, you can skip any spicy ingredients. Also add crunchy cashews that is toasted in the skillet along with the veggies make the stir fry even more delicious but you can skip it if you want to keep the stir fry nut free.

To make frozen vegetable stir fry, we use the following ingredients.

- frozen vegetables 16 oz (I used california blend that includes sliced carrots, broccoli and cauliflower florets)
- salt adjust to taste
- sesame oil 3 tablespoons
- soy sauce 2 tablespoons
- garlic powder 2 teaspoons
- lemon juice 1 tablespoon
Optional ingredients:
- raw cashews ½ cup
- brown sugar 1 teaspoon
- dried red chilies 2 to 3 (broken or use 1 teaspoon red chili flakes)
step by step instructions
- Place the frozen mixed vegetables (sliced carrots and broccoli, cauliflower florets) in a large sized pan or skillet.
- Cook in low to medium heat for about 2 to 3 minutes until the water from the frozen vegetables evaporate.
- Add salt, garlic powder and 2 tablespoons of sesame oil, mix to coat the vegetables and cook for another 2 minutes.
- Cover the pan with lid and cook in low heat for about 4 minutes time.
- Once this is done, open the lid and add the remaining one tablespoon of sesame oil and also the soy sauce & lemon juice, mix well to combine with the veggies (if you are using brown sugar, red chilies and/or cashews, add that too).
- Keep in medium heat and stir fry the vegetables for another 3 to 4 minutes (stir in between to avoid the vegetables burning) until the veggies are well roasted and slightly browned on the outside.

- Serve the stir fried mixed vegetebales as a side dish along with rice, quinoa, eggs or other proteins as you like or enjoy as a main dish along with other sides for lunch or dinner.

this is very good. the only changes I made was I added cooked ground turkey to it I didn't have any cashew so I used about a fourth of a cup of blanched almonds and I added a can of water chestnuts. this is going to be a great lunch this week thank you for sharing.
