I know, the dough doesn't look so good in the picture, but honestly I am not that good at kneading dough by hands to perfection!
So even if you are not an expert in kneading pizza dough or any kind of dough by hands, you do not need to worry about making soft pizza dough even if you do not have a stand mixer to do the job!
This easy & soft & fluffy pizza dough recipe is the best fluffy pizza dough recipe for any beginners looking to bake simple & delicious homemade pizzas without much efforts.
You can even make pizza without cheese using this soft & fluffy pizza crust (by using just pizza sauce and toppings) since the crust itself is very fluffy, soft & delicious.
Using this soft and fluffy pizza dough recipe, I made one pizza without cheese using added sweet corn, which is made in a skillet and so it's super fluffy & soft in texture.
Sweet corn pizza may be an unusual pizza, but my kids love sweet corn and so why not make it if you love it? There is no reason not to add corn on the pizza if you really likes corn.
This soft & fluffy skillet pizza with lots of sweet corn (without any cheese!) is so delicious and perfect for anyone who loves sweet corn!
The other Indian style pizza that I made was also without using regular cheese, but I added paneer which is actually a kind of cheese very popular in India.
As you can see from the picture, I didn't add any cheese other than the paneer which is cheese in a different texture (it doesn't melt) but it's delicious & very filling when added as a pizza topping.
You can also add paneer as a topping to regular pizza along with mozzarella cheese as usual.
I just didn't use any extra cheese this time for both sweet corn pizza & paneer pizza since I wanted to make them without mozzarella cheese since I didn't have any while I was making these pizzas!
But these pizzas turned out really good with the flufy crust.
Basically, this is just how I made it but you can add your favorite toppings & cheese as usual, and make the pizza just like you want it using this soft and fluffy pizza dough!

Secrets to making easy, stretchy, fluffy pizza dough at home
Instead of water, we use milk to make soft and fluffy pizza dough.
Using whole milk is the best but you may also use 2% milk if that is what you have at home.
During the process of making the pizza dough, we first make a very sticky dough using milk & flour, then add more flour to it make the soft pizza dough.
The dough will still be more stickier than usual pizza dough and once you have risen the dough (for about 2 to 3 hours), you have to divide the dough, and add more flour to the dough while working on the dough to make the pizza crust.
You may wonder if you can add all the flour in the beginning itself to make the process more faster.
But the secret to the soft , fluffy & delicious pizza dough is in making the sticky pizza dough first, and then adding more flour to it while kneading and also while stretching the dough by hand to make the crust.
This is infact, one of the most important part of getting the soft dough.
Also, it is important not to reduce the amount of yeast as directed in the recipe to make this easy, delicious & soft, fluffy homemade pizza dough.
How To Make Fluffy Pizza Dough?
We use the following ingredients to make soft pizza dough at home. Make sure to use all purpose flour in this recipe for the desired results!
Ingredients needed to make fluffy pizza dough
all purpose flour 3 cups
whole milk 1.5 cups (slightly warm)
instant active dry yeast 2 ¼ teaspoon (1 package)
olive oil 2 tablespoons (may need little more)
extra flour as needed for kneading & dusting (see notes)
sugar 3 tablespoons
salt adjust to taste
Step by step process
Add yeast and 2 tablespoons of sugar to the warm milk, stir well. Let this mixture sit (covered) for about 30 minutes until the mixture is very frothy.
Add the all purpose flour to a large bowl.
Also add the remaining one tablespoon of sugar and enough salt (adjust to your taste), mix well so the sugar and salt will evenly mix with the flour.
Add the prepared yeast mixture to the flour, mix everything well until all the flour is well mixed with the yeast mixture.
Also add the olive oil and mix the flour again to blend the oil evenly with the flour mixture.
Knead well using your hands for about two minutes and you will get a very sticky dough.
Add more dough to the flour mixture, little by little, so you can form the soft but slightly sticky pizza dough.
Cover the bowl and let it sit for about 3 hours of time so the dough will rise nicely.
Once the dough has risen enough, let's work on the dough to make the pizza crust.
To make the pizza crusts:
Divide the dough into two equal portions, and trasfer the first portion of dough to the work space.
The work space should be flat & dusted with little flour so you can easily work on the crust.
Knead the pizza dough (the first portion), and add a little oil if needed. Also add little flour as needed as the dough becomes sticky when you work on it.
How To Stretch The Dough By Hand Or Roll To Make Pizza Crust
Slowly stretch the dough with your hands to form the pizza crust.
If the dough breaks or become sticky to handle, add little more flour and then using your hands you can press on the dough to stretch it.
Use flour little by little as needed, to work with the pizza crust.
If needed, you may use a rolling pin but its really not necessary as the soft pizza dough will be very stretchy.
Add the toppings:
Once stretched enough to form the pizza crust, you can add the sauce, toppings like veggies of your choice (I like to use corn, sliced paneer etc other than the usual toppings as kids like them).
Then add shredded cheese like mozzarella or mexican blend or any of your favorite cheese for pizza (I sometimes make pizza using this dough without cheese by using just the saue & toppings and its still very delicious as the crust itself is very soft, fluffy & delicious).
To bake the pizza
Preheat oven to 500 degree Fahrenheit.
Since I do not have a pizza stone as of now, I like to use a large baking sheet lined with foil, on which I place the prepared pizza crust.
Bake the pizza for about 12 minutes until the pizza crust begins to brown lightly on the edges.
Once baked, immediately transfer from the hot oven and let it cool down a bit and slice the pizza while its still warm, serve & enjoy!
As I told earlier, I made this paneer pizza without any mozzarella cheese and no other toppings.
But you can add any of your favorite pizza toppings & cheese as you desire.
Once the first pizza is baked, you can work on the second half of the pizza dough by following the same steps.
To bake in cast iron skillet (optional)
This pizza dough is soft and rises well and it can be baked easily in a cast iron skillet too.
It took more time for me to bake the pizza in the skillet though. It took about 20 minutes to completely bake.
Since the pizza baked in a skillet will have a thicker crust, you can use a toothpick (just like you do in cakes) to see if the inside is cooked or not.
If the toothpick inserted at the center of the crust comes out clean, its done!
As you can see, I made a sweet corn pizza by using sweet corn kernels as an easy, delicious topping.
And I didn't add any other toppings or cheese, but just corn & sauce and it was delicious!
That is just an example of how easily you can make a delicious fluffy pizza even without cheese, but feel free to add any of your favorite pizza toppings & cheese as you prefer!
Notes: The amount of extra flour you will need to make the pizza dough will depend on many factors. We just need to start with about ½ cup flour at a time and knead well and see if its enough.
If not, add half cup more flour (or about ¼ cup) dependng on the consistency of the dough.
Keep in mind that we are making a sticky dough anyways and we will have to add little more flour when we stretch the dough to make the pizza crust.
