Tagliatelle pasta with garlic, butter and sauce is a delicious Italian egg noodles which is super easy to make for dinner or lunch.
Traditionally served with bolognese sauce, this vegetarian version of the recipe is basically a simple and easy buttered Italian egg noodle recipe using tagliatelle pasta with added cheese and tomato based sauce.
You may substitute the garlic tomato pasta sauce with any sauce you prefer! If you love egg noodles, do try this buttered, variety egg noodles with sauce.

What is tagliatelle pasta noodles?
Tagliatelle pasta is traditional Italian egg noodles which is made using durum semolina wheat flour and eggs.
The term "tagliatelle" refers to pasta cut in narrow ribbons and that's exactly how it looks before cooking.
The uncooked tagliatelle looks like dried curled up nests or clusters of narrow ribbons.
As you cook, the nests or clusters loosens up and they look similar to other kinds of pasta noodles like fettucine.
The tagliatelle pasta noodles is quite yellow in color, because of the presence of egg yolks in it.
How to make homemade tagliatelle pasta?
In this recipe, I have used store bought tagliatelle pasta noodles.
However, it is easy to make your own homemade tagliatelle pasta without pasta machine.
You just need eggs and flour to make tagliatelle.
Start with a small amount of ingredients if you are not familiar with making pasta at home.
Here is a great recipe for making your own homemade tagliatelle which you can use in this recipe if you want to make your own tagliatelle noodles.
How to make buttered tagliatelle pasta noodles in sauce?
To make easy, delicious buttered tagliatelle pasta noodles in sauce, we use the following ingredients.

tagliatelle pasta noodles 8.8 oz (or approxiamate amounts)
water 2 to 3 quarts (as needed to cook pasta)
olive oil 2 tablespoons
butter 4 tablespoons
salt adjust to taste
dried parsley 1 teaspoon
black pepper powder ½ teaspoon
garlic powder 1 teaspoon
onion powder 1 teaspoon
roasted garlic tomato pasta sauce 2 cups (adjust to your preference, may use another pasta sauce)
shredded cheese 1 cup (I use cheddar or Mexican blend)
red chili flakes 1 teaspoon for garnishing (optional, you may add more if you like it spicy)
Step by step instructions
Add water to a pot or saucepan and bring it to a boil.
Add salt and add the tagliatelle pasta.
Also add one tablespoon of olive oil, stir well using a good quality spatula and cook in medium heat for about 4 to 6 minutes until the noodles is cooked to your preference.
Make sure to stir in between as the pasta is cooked.
Once the noodles is cooked, turn off the heat and carefully drain the water.
You may retain a little leftover water (about a cup) in the pot itself which will add a saucy texture once we add the remaining ingredients.
Add the remaining one tablespoon of olive oil and mix well to coat the tagliatelle pasta noodles.
Add the butter, turn on the stove again and saute the noodles in the butter sauce for another 1 to 2 minutes.
Also add the seasonings like parsley, black pepper, garlic and onion powders.
Add the shredded cheese too and mix in with the pasta.
Turn of the heat and transfer the prepared, buttered tagliatelle pasta to serving plates.
Top with red chili flakes (optional), more parsley flakes and add the tomato garlic sauce (or any sauce of your preference, alfredo sauce is another great choice!). Serve hot & enjoy!
Alternatively, you can toss the noodles in pasta sauce in a large skillet or pan, add little more olive oil (about ¼ cup) and stir fry the noodles in sauce for about 1 to 2 minutes for the best flavors!
What to serve with tagliatelle pasta?
This is traditionally served with bolognese sauce.
Since this is a vegetarian pasta dish, you may serve with vegetarian bolognese sauce or you can serve it with tomato garlic pasta sauce like I did, or you can serve it with tomato basil pasta sauce, any fresh homemade pasta sauce, alfredo sauce etc or anything you like to go with it.
You can also serve this along breads and olive oil dip, roasted vegetables, soup etc.
Notes: The flavor of the egg noodles will greatly depend on the pasta sauce that you use too, so make sure to use the best garlic tomato pasta sauce or choose a pasta sauce that's your favorite.
In this recipe, I have used roasted garlic tomato pasta sauce which goes great with this noodles.
I have found that good quality tomato based pasta sauces and alfredo sauce also taste great with this dish.
If you are not in a hurry, toss the noodles with the sauce and little more olive oil (as mentioned in the last step) and stir fry for a couple of minutes, which will bring out the best flavors!
Also, adding more olive oil and red chili flakes (if using) makes this noodles very yummy, so feel free to use more of these if you want!
