For 1 lbs spaghetti noodles, we use 6 cups of water here though we only need about 4.5 cups to 5 cups of water to cook the spaghetti in instant pot. The extra water added make sure that the spaghetti is cooked completely and also gives you some leftover liquid which is perfectly fine with this recipe, because we are going to make the spaghetti in creamy pasta sauce, for which the extra liquid is very helpful.
Also, keep in mind that as the noodles cool down, the noodles will absorb most of the extra water of sauce. So make sure to serve this dish hot if you like to enjoy the creamy sauce as it is! Once its cooled completely, its still very delicious, but the noodles will probably absorb most of the liquid sauce in it.
Instant pot spaghetti noodles stuck together:
Another problem that can happen with spaghetti noodles that is cooked in the instant pot is, the noodles getting stuck together or getting clumped together once it is cooked. This doesn't happen while you prepare the noodles in the traditional way by boiling it in water first, because there is a lot of water and also you get to stir the noodles in between. With the instant pot, we are using relatively less amount of water to cook the noodles and we don't get a chance to stir the noodles while its cooking, so there is a greater chance of the noodles getting stuck together while its cooked.
To avoid this from happening, we do the following things:
We lay the noodles in criss cross patterns after the noodles is broken to fit in the instant pot. It is important that we lay the noodles in criss cross pattern in opposite directions and separate from each other as much as possible, to avoid the noodles from sticking together. Arranging the noodles this way only takes a few seconds, so this is not hard at all.
In this recipe, we also soak the noodles in the water for few minutes before cooking, and then separate any noodles that have already started to stick together using a fork, which will help with reducing the noodles sticking together once its cooked. Make sure to use the olive oil and butter that we use in the recipe, which will help with preventing the noodles getting stuck together while cooking. If you do not want to use any butter, you may replace the butter with the same amount of olive oil.
Another important thing to remember is to not stir the contents once you have added the water and remaining ingredients to the pot. This is because, we have already arranged the noodles in a criss cross pattern, and any stirring can change the pattern and also the noodles may stuck out of the water which is not ideal. So avoid stirring the contents before you cook the noodles to reduce the chance of noodles sticking together. Once the noodles is cooked, if there is still any noodles sticking together, you can add a little more olive oil and simply use a fork to separate the noodles easily.
