There are different kinds of cucumber salads.

Many of the cucumber salads do not use any creamy dressing though this creamy cucumber salad is one of my favorite kind of cucumber salads.

This is perfect for a refreshing summer salad, potlucks, get togethers and family dinners.

I also have this South Indian style creamy cucumber pachadi (cucumber with yogurt South Indian style salad recipe) and also cucumber moru curry or cucumber pulissery (cucumber yogurt coconut curry) which are all easy to make Indian dishes using cucumbers and creamy yogurt (or curd).

What kind of cucumbers are used for creamy cucumber salad?

creamy cucumber salad with sour cream

You may use any variety of cucumbers that you prefer, though those with less seeds or seedless are recommended.

English cucumbers will do the best in my opinion, since they are usually not bitter in taste.

English cucumbers are slight sweet in taste and have the perfect crunchy texture with delicate skin (in this recipe I recommend peeling the skin since we can use different kinds of cucumbers).

If you are using English cucumbers, you may not even need to peel the skin.

However, feel free to try this recipe with any variety of cucumbers that have less seeds.

How to make creamy cucumber salad?

We use the following ingredients to make easy, refreshing cucumber salad at home using any variety of salad cucumbers.

Ingredients to make creamy cucumber salad

cucumbers 3 medum sized (refrigerated)

sour cream 2 cups (refrigerated)

salt 1 teaspoon (adjust to taste)

sugar 5 tablespoons (may use more or less based on preference)

dill chopped 1 tablespoon (optional)

water as needed for soaking the cucumbers

Step by step instructions

Wash the cucumbers very well, peel the green skin and slice in rounds.

Place the sliced cucumbers in a bowl of water (cover with water) and add salt. Mix well to combine. Let the cucumbers sit in salted water for about 15 minutes (keep it covered).

Once it’s done, mix the contents again, then discard the water used for soaking cucumbers. This step will help to get rid of any bitterness the cucumbers may have. Add more salt if desired.

(If using english cucumbers, you may leave the skin if desired and also if you are using cucumbers that have not bitter taste at all, you may skip the soaking step).

Add the sugar also to the bowl, mix well to combine with the salted cucumbers.

You may adjust the amount of sugar based on your preference. Let this mixture sit for another 5 to 10 minutes (another step to help reduce any bitterness).

Once the sugar is dissolved, there will be liquids left in the bowl, which you can discard now.

Transfer the prepared cucumbers to salad serving bowl, add the sour cream and mix well to combine.
