Spinach Strawberry Salad

This easy spinach strawberry salad recipe which is also sugar free and healthy (vegetarian and vegan fruit veggie salad) is made with fresh or frozen spinach leaves (you can use baby spinach leaves as well) & fresh or frozen strawberries to make the salad along with crunchy cashew nuts.

If you are using fresh spinach and strawberries, just wash them thoroughly and use for this easy spinach strawberry salad recipe.

If you are using frozen spinach and frozen strawberries you can microwave them for few seconds to lightly warm up, if you wish. Either way, the spinach strawberry salad is delicious with crunchy cashew nuts.

In fact, one main ingredient in this easy spinach strawberry salad recipe is the cashew nuts.

You can use either raw cashew nuts or roasted unsalted cashew nuts.

Why I say unsalted cashew nuts is because we add salt to the salad and so it is convenient to decide the amount of salt we need if all the ingredients we use are unsalted.

If you are using any already salted ingredients, you have to keep that in mind while adding more salt to avoid making the salt too salty.

I used raw cashew nuts in this easy salad recipe, but the roasted unsalted cashews will be more delicious if you prefer more crunchy salad.

If you don’t prefer cashew nuts for any reason, you can also try this easy spinach strawberry salad recipe with walnuts or almonds instead of cashews.

There also you have the option of choosing raw walnuts or roasted unsalted walnuts or raw almonds or roasted unsalted almonds.

I love the addition of cashew nuts in this salad as they pair together very nicely and they are so delicious.

I was skeptical when I first learned of the combination of spinach and strawberries. I was not sure if it will taste good but I should say I am surprised to learn how awesome the combination of spinach and strawberries really is.

The choice of dressing is yours as you can choose from many different salad dressings that are fully vegetarian or vegan. Here we used a simple salad dressing of salt and olive oil which is quick and easy to make and goes very well with this easy spinach strawberry salad recipe.

Feel free to adjust the salad dressing ingredients according to your preference.

You may also add extra ingredients like crushed black pepper or paprika or more lime juice or lime zest, which all will go great with this simple salad dressing.

We use cashew nuts in this salad recipe which add crunchiness you can use raw or roasted unsalted cashews as you prefer. You may also use any other nuts instead.

Ingredients

  • 2 cups fresh strawberries
  • 1.5 cups fresh baby spinach leaves or use regular spinach
  • 1 cup cashew nuts raw or roasted unsalted cashews
  • salt as required
  • 1 tablespoon Olive oil
  • 2 teaspoons Lemon juice

Instructions

  • Wash the strawberries and spinach leaves thoroughly. You may wash them in a vinegar solution if you like to make sure they are clean.
  • Slice the strawberries in half lengthwise and transfer it to a large bowl.
  • Add the washed spinach leaves and cashews to the bowl and mix the contents together.
  • Make a simple salad dressing by mixing together the salt, lime juice and olive oil together in a small bowl.
  • Add this simple dressing to the salad and gently toss the salad to blend well with the dressing. You may add more oil or salt if you wish.  Transfer the salad to a salad serving bowl, serve and enjoy!

Notes

If the spinach or strawberries are frozen or cold, you may microwave the contents for few seconds for a warm bowl of fruit veggie salad for lunch or dinner or breakfast or even snack, if you don't want a cold salad.
