Eggnog chia seed pudding with leftover eggnog makes one of the best, delicious chia seed puddings for desserts or breakfast or snacks!

It is easy to make using any leftover eggnog drink from holidays and you can enjoy relatively healthyish pudding (as we don't any extra sweetener in this chia pudding, however the eggnog already contains sugar). I used store bought non alcoholic eggnog (Southern Comfort eggnog) in this chia pudding recipe.

After the holidays, if you are trying to eat more healthier but if you still have leftover eggnog in your refrigerator, this eggnog chia pudding might be a good option for you since we use healthy chia seeds to make the pudding, though it's not completely healthy or sugar free as the eggnog already has sugar content in it. But this pudding might be a great transition from holidays to January where you try to move from holiday desserts (and to use up any holiday leftovers) to more healthy eating! ingredients used to make eggnog chia pudding:
eggnog 1 cup
chia seeds 2 tablespoons (may add a couple more tablespoons if you want a thicker pudding)
Optional ingredients:
nutmeg ⅛ teaspoon
cinnamon powder a pinch
vanilla extract ½ teaspoon
fresh fruits like berries, sliced bananas etc (or any fruit of your choice)

Step 1 - Add the eggnog to a clear glass cup or jar or coffee mug or bowl.
Step 2 - Add the chia seeds, stir well to combine with the eggnog. If using any of the optional ingredients, you can add them too (except the fruits if you intend to use them as topping) and stir well to combine.
Step 3 - Cover and keep in the refrigerate to soak the chia seeds in the eggnog, for overnight or at least 6 to 8 hours, though I recommend soaking the chia for more hours for best results. Also, for the best results, stir the contents using a spoon, after soaking for few hours, and then put the contents back in the refrigerator for even soaking that yield better results.
Step 4 - Once the chia seeds are soaked for several hours and the pudding is thickened, enjoy as a delicious dessert, snack or breakfast as you desire! You may add sliced fresh fruits or berries for topping!
