- 1.5 cups all purpose flour
- 1.5 teaspoon baking powder
- ¾ cup sugar
- ½ cup butter melted
- 2 large eggs
- 1 cup eggnog
- ½ cup whole milk (may use a little more like 2 more tablespoons if the batter is too sticky to handle)
- 1 teaspoon vanilla extract

Step 1 - Place the flour in a large bowl.

Step 2 - Add baking powder and mix well to combine with the flour evenly.


Step 3 - In a different large bowl, beat the eggs well keep it aside.

Step 4 - Now take the melted butter in a different bowl (you can easily melt the butter in the microwave by heating for about 1 minute in a microwave safe bowl) and add sugar to it. Step 5 - Mix the butter sugar mix well so it's well combined to form a mixture.


Step 6 - Now add this butter sugar mixture (make sure it's not hot at this point) to the beaten eggs and mix well to combine with the eggs (if the butter is hot, the eggs may curdle so make sure it's not hot!).


Step 7 - Now add the eggnog, milk and vanilla extract also to the egg butter sugar mixture and mix everything well so the wet ingredients mixture is formed.




Step 8 - Add the wet ingredients mixture to the dry flour mixture and mix well to combine the ingredients evenly. Make sure there's no dry flour left at the bottom of the bowl. Now the eggnog cake batter is formed.



To bake the eggnog cake:
Step 9 - Preheat oven to 300 degree Fahrenheit.
Step 10 - Prepare a 9 inch cake pan by greasing with some butter and line with a parchment paper.
Step 11 - Add the prepared cake batter to the prepared cake pan.

Step 12 - Bake in the preheated oven for about 40 to 45 minutes until a toothpick inserted at the center of the cake comes out clean!
Step 13 - Once the cake is baked, immediately transfer the cake pan from the hot oven to a cool place.

Step 14 - Allow the cake to cool down, just slice and enjoy it as it is (it's delicious without any frosting!), or add any frosting of your choice like vanilla cream cheese frosting, chocolate cream cheese frosting, whipped cream frosting using heavy whipping cream or simply decorate with cherries (like I did here) or use fresh fruits like blueberries, raspberries, sliced strawberries etc as you wish!
