    tapioca pudding in instant pot

Tapioca pudding is a delicious dessert made of white tapioca pearls or tapioca balls that turn transparent or transulent once cooked.

Tapioca pudding is delicious as it is, but you can also add more toppings like fresh fruits (strawberries, bananas, pomegranate etc), or add sliced nuts or any toppings as you like!

I usually like to add fresh fruits like strawberries or bananas to homemade tapioca pearl pudding.

Tapioca pearls or tapioca balls are the starchy spheres made from the cassava plant roots and they make really delicious puddings.

Tapioca pearls are also to make boba tea, but the tapioca pearls used to make boba tea are usually different from the kind of tapioca pearls used to make puddings and desserts.

In India, these are used to make kheer, which is again Indian style pudding made with milk, ghee, tapioca pearls etc.

The popular kheer made in India using tapioca pearls is known as sabudana kheer.

Tapioca pearls are much similar to sago pearls and can be used as a substitute for sago in many recipes.

However, sago pearls are different from tapioca pearls since sago pearls are made from palm tree extracts.

This tapioca pudding made in in the instant pot has a slightly different method of preparation.

This is eggless and it is made thick with the help of small tapioca pearls, condensed milk and cornstarch.

I have also made eggless tapioca pearl pudding on stove top with small tapioca pearls, which you can try also!

Rice pudding with condensed milk is another creamy, delicious dessert that you can easily make in the instant pot pressure cooker!

Instant pot method to make tapioca pudding

This method of making tapioca pudding in the instant pot pressure cooker is so much more easier!

Cooking tapioca pearls in the instant pot is so much more faster and easier and so making tapioca pudding in the instant pot is so much easier as well.

However, it looks to me that cooking tapioca pearls perfectly is somewhat tricky.

This is because, sometimes the tapioca pearls won't cook completely and leave a trace of uncooked, chewy middle part that won't taste good.

And sometimes they cook too much (as we try to cook the middle part), and just disintegrates into the liquid.

To make the perfect tapioca pearl pudding that tastes the best, it is very important that you cook the tapioca pearls perfectly, which looks transparent when completely cooked.

With the instant pot method, there is also an issue of running into the "burn error" which happens when food gets stuck to the bottom of the pot.

When that happens, the instant pot gives the burn error and won't cook after the error is displayed.

When you make tapioca pudding in the instant pot, it can result in burn error message, if there is no enough liquid.

So it is important to add enough liquid to cook the tapioca pearls in the instant pot, to make the tapioca pudding.

The problem with this method is that once the tapioca pearls are cooked, there is so much liquid leftover from the cooking which is not desired.

To fix that, we also add cornstarch mixture to achieve the desired consistency for the tapioca pudding prepared in the instant pot.

Also, the pudding will thicken further as it cools down, so it will be of perfect consistency when you are ready to enjoy it!

We may add fresh fruits like strawberries or bananas or sliced almonds or pistachios just before serving!

So here is how you can make easy, delicious and creamy tapioca pudding in instant pot.

How to make instant pot tapioca pudding?

    tapioca pudding in instant pot

We use the following ingredients to make homemade tapioca pudding in the instant pot pressure cooker from scratch!

    tapioca pudding

ingredients to make instant pot tapioca pudding

    small tapioca pearls ¾ cup

    water 3 cups

    whole milk 1 cup

    sweetened condensed milk 1.5 cups

    vanilla extract 1 teaspoon

    cornstarch 1 tablespoon

    cold milk 2 tablespoons

    step by step instructions

First, add the water and milk to the instant pot.

Then, add the small tapioca pearls to the milk and water mixture.

Stir the mixture, close the instant pot with lid in sealing position and cook in high pressure for 10 minutes.

Once the cooking is done, wait for a natural pressure release.

Once the pressure is all released, carefully open the lid and stir the contents. The tapiocal pearls should be well cooked by this time.

Add the vanilla extract and mix with the mixture.

Now, let's make a cornstarch slurry to thicken the pudding.

To make the cornstarch slurry, mix the one tablespoon of cornstarch with about 2 to 3 tablespoons of cold milk or water. Make sure to mix well so there are no lumps formed in the cornstarch mixture.

Press saute and simmer the mixture, and add the prepared cornstarch mixture to the tapioca pearl pudding mixture.

Stir well continuously as the mixture simmers, so no lumps are formed and the cornstarch mixture dissolves into the pudding, making it thicker.

Keep in mind that the pudding will further thicken as it cools down so you do not need to thicken the pudding a lot, at this point.

Once the pudding reaches the desired consistency (it will further thicken as it cools down more!), add the sweetened condensed milk and stir well to combine with the pudding, press cancel button and you can unplug the instant pot.

It is a good idea to transfer the inner pot to a safe, cooler place so the pudding won't thicken further.

Allow the prepared tapioca pudding to cool down to room temperature, then transfer to refrigerator and chill the pudding.

Serve the pudding chilled for best results!
